In May, we began our new tradition of Sunday Family Dinners. And although each month has been wonderful, September was a milestone as it was the first dinner that all of my siblings and their families were in attendance. My brother and his family were in from NYC and my sister from SF came down….it was a full house!

With all the sibs in attendance, we needed to have an epic Sunday Family Dinner. The theme for our dinner was a N’awlins inspired Seafood Boil! Crabs, Lobsters, Prawns, Crawfish, Calamari, Clams, Oysters— OH MY! We seriously threw down over 50 pounds of seafood!

For dessert, my sister P, whipped up fresh beignets showered with powdered sugar and served with homemade Vietnamese Coffee Ice Cream. The beignets were so beautifully tender and crispy…. and the ice cream was To Die For.

My contribution for the night were these little appetizers that I was initially going to call Baby Po’Boys but have since changed the name to Cajun Crab Puffs. These little buggers were TASTY! The crab was wonderfully sweet and paired well with the spicy aioli. The tomato and scallions gave a bright, fresh note and c’mon…who doesn’t love flaky, butter puff pastry?!

But as decadently delicious as everything was, it was just incredible to have everyone under one roof again. The kids were running around and they even made personalized “seafood bibs” for each of us out of trash bags. Adorable and quite useful!

And although it was a bit chaotic (c’mon, what family shinding isn’t?), it was the epitome of why we started Sunday Family Dinners in the first place.

Cajun Crab Puffs

Ingredients:

½ tablespoon minced garlic
1 large egg yolk
½ tablespoon lemon juice
½ cup extra virgin olive oil
½ tablespoon hot sauce
1 teaspoon Old Bay seasoning
Kosher Salt and Black Pepper
1 sheet puff pastry, thawed
6 ounces lump crab
2-3 pinches cayenne powder
1 cup cherry tomatoes, thinly sliced
¼ cup chopped chives (although I used scallions)

Prepare the aioli. Add garlic, egg yolk, and lemon juice into a blender. Pulse several times until the items have blended together. Turn the blender on low and slowly stream in the olive oil. Continue to blend until all of the oil has been used and the consistency reaches a thick consistency. Blend in the hot sauce and Old Bay. Check for seasonings and adjust with kosher salt and pepper as needed. Refrigerate for at least 30 minutes.

Preheat oven to 400 degrees F.

Take the sheet of puff pastry and cut squares about 1½ inch in diameter. Bake the squares for 18-20 minutes or until golden brown. Remove from the oven and allow to cool on wire racks. Once cooled, slice each square in half.

Season the lump crab with cayenne powder.

Begin assembling the puffs. Take one half of a puff pastry square and top with a slice of tomato and a spoonful of crab. Drizzle some of the aioli on top of the crab and then garnish with chives. Top with the other half of the puff pastry square. Repeat with the remaining ingredients and serve.

I’m rather, shall we say– “passionate” about my sports teams. When we win, I’m ecstatic and when we lose, I scream like a banshee. And if it’s the latter, it’s best to leave me alone for awhile.

But at least this sore loser can make a helluva dish of Guacamole. And not just any Guacamole but one filled with smoky, roasted poblano peppers.

I’m not guaranteeing that I still won’t sulk and be fussy if my team doesn’t bring home the “W” but this Roasted Poblano Guacamole sure does make me feel better….and of course, the margaritas help too.

Roasted Poblano Guacamole

Ingredients:

1 Large Poblano Pepper
1 Tablespoon Vegetable Oil
3 Large Ripe Avocados, seeded and peeled
1 Tablespoon Fresh Lime Juice
1 Garlic Clove, minced
1 Shallot, finely diced
1 Serrano Pepper, seeded and diced
¼ Teaspoon Cumin Powder
3-4 Pinches Cayenne Pepper, optional
¼ Teaspoon Garlic Salt
2 Ripe Roma Tomatoes, seeded and diced
1 Tablespoon Cilantro, chopped
Kosher Salt and Pepper

Rub the outside of the poblano pepper with oil and place on a baking sheet. Place the sheet underneath the broiler and roast for 8-10 minutes, rotating the poblano every few minutes until all sides have been charred. This can also be done over a gas burner while holding the poblano with tongs directly over the flame. Once roasted, immediately place the poblano into a bowl and cover with plastic wrap. After the poblano has cooled, about 10-15 minutes, remove from the bowl and gently peel off the skin. Remove and discard the stem and seeds. Chop the poblano and set aside.

In a large bowl, mash the avocado flesh with a large fork or potato masher. Add the lime juice, garlic, shallot, serrano pepper, and chopped poblano. Mix in cumin, cayenne, garlic salt, tomatoes, and cilantro –being careful not to overly crush the tomatoes. Adjust seasonings with kosher salt and pepper as needed.

Garnish with additional cilantro and serve with tortilla chips. Enjoy!

Who would have ever thought that this Dorito-lovin’, Chips-feening gal would turn to Kale Chips?! Nope, not me!

Well….that was until I stepped into my friend J’s kitchen a few years ago and my whole world was flipped upside down. While we were sipping on one of her new cocktail creations, J pulled out a freshly baked tray of chips……oh yes, Kale Chips. Whaaa????? And before judgey-wudgey could set in, I grabbed a crispy leaf and took a bite.

Holy Cow! It was wonderful!!!

Crispy, light and full of salty goodness. And since then, I’ve been a Kale Chips believer!!! The recipe below is more of an introduction to a method versus exact measurements as you can add and omit as you see fit. I, myself, like a really kicked up version and throw in several pinches of cayenne and chili flakes. But if you prefer a milder approach, just add a pinch or so.

These are particularly delish on game days when you can wash it down with a nice icy cold beer or alongside a great sammy. Either way, these Kale Chips are wonderfully delish! And the perk? You can feel good about eating a big ol’ bowl of these.

Baked Spicy Kale Chips

Ingredients:

1 Large Bunch of Kale, washed and dried
Cayenne Pepper
Red Chili Flakes
Garlic Powder
Kosher Salt
1 Tablespoon Olive Oil

Preheat oven 275 degrees F and line a baking sheet with parchment paper. Tear the kale leaves into pieces and place in a large bowl. Toss the kale with olive oil and sprinkle the spices over the leaves, coating evenly. Arrange the kale in a single, even layer on the baking sheet. Bake the kale for 20-25 minutes until crispy, flipping the leaves halfway. Enjoy immediately.

Let me tell ya….

I’ve learned two things since we’ve started our Sunday Family Dinners.

First is that my family is obsessed with food. So obsessed that while we’re gorging on a deliciously bountiful Sunday Family Dinner, we already begin planning what’s on the menu for next month! We’ve got issues!

And second—we always, ALWAYS make too much food. It’s pretty ridiculous.

At our last European themed dinner, my family fixed up Chicken Marsala with Angel Hair Pasta, Beef Wellington with Green Peppercorn Sauce, Garlic Mashed Potatoes, Antipasti of Grilled Vegetables, Crispy Arancini, and Chocolate Mousse in Phyllo Cups. A little overboard, eh?

But we’ve also grown up with the mentality that it’s always better to have more food than less food. After all, leftovers are delicious!

I jumped on the chance to make Beef Wellington for the fam bam. Unfortunately after all the time and effort (and stress!), it was just “meh”. Oh well, chalk it up to experience…..

Thank goodness my saving grace were the Arancini I made to snack on while we were fixing up dinner. These Arancini were made of mushroom risotto balls that were stuffed with mozzarella cheese and then breaded with Panko. I fried these beauties until golden brown and then made some marinara to dunk them in. They came out wonderfully crisp on the outside and rich and creamy on the inside. Delizioso!

I can hardly wait for our next Sunday Family Dinner coming up this weekend. It’s EXTRA special because all the Nguyen Siblings and their families will be attendance—gathered together from New York, San Francisco, San Diego, and Orange County. There’s no doubt it will be delish but more importantly, it will be filled with tons of love and laughter!

And as the cherry on top–our theme will be honoring the flavors of New Orleans! *drools*

This Month’s Family Dinner Menu

Cocktails: Vino
Appetizers: Crispy Arancini with Marinara
Entrees:Chicken Marsala with Angel Hair Pasta, Beef Wellington with Green Peppercorn Sauce, Garlic Mashed Potatoes, Antipasti of Grilled Vegetables
Dessert: Chocolate Mousse in Phyllo Cups

Crispy Arancini stuffed with Mozzarella
Makes approximately 30-36 balls

Ingredients:

3 cups cooked Risotto, chilled
3 dozen ¼-inch pieces of mozzarella cheese
1 cup flour, seasoned with black pepper and kosher salt
3 large eggs, beaten
2 cups panko bread crumbs
vegetable oil
Marinara Sauce
Italian Parsley for garnish

Using a spoon or small ice cream scooper, spoon out 1 tablespoon of chilled risotto. Gently flatten out the risotto and use your index finger to press an indentation in the middle. Place one piece of the mozzarella cheese in the center and fold over the sides to cover. Use both hands to roll and evenly shape into a ball. Place the arancini on a wax paper lined plate and repeat until they have all been formed. Transfer the plate to the refrigerator and chill for 20-25 minutes.

While the arancini chills, take 3 shallow dishes and place the flour, eggs, and Panko bread crumbs into each. Fill a heavy bottomed pot with about 3 inches of vegetable oil and heat to 375 degrees F.

Working in batches, dredge a few of the arancini in the flour, then the eggs, and finally the Panko breadcrumbs to coat. Gently shake off the excess between each step. Place the prepared arancini on a cookie sheet that has been covered with cooking spray.

In batches, fry the arancini in the heated oil for 4-5 minutes or until golden browned. Remove from the oil and drain on paper towels. Transfer to a platter and garnish with parsley. Serve immediately with warmed marinara sauce.

I love the movie Soul Food and have watched it at least a cajillion times. Sure, it had some predictable spin of dramas but I always envied the Sunday family dinner at Big Mama’s house with all the delish soul food and of course–the family time.

Since moving back down to Southern California, I have really appreciated the frequency and quality time I get to spend with my family—and in particular, my nieces and nephew. Because of the distance, I only used to see them on sporadic weekend trips for holidays or special occasions. And it was because of this that I was always worried that I was missing out on seeing them grow up.

Now that I’m only about an hour’s drive away, I try to see them as often as possible—for “non-holiday” visits. And truth be told, I’m trying to squeeze in as much time as possible since my older nieces (now 13 and 11) will soon get to the age where it won’t be cool for them to hang out with their auntie. Eeek! Add that with the fact that we’re all busier than ever, it is so  important that we establish some type of traditions to keep our family ties strong.

So, with a little inspiration from Soul Food, I cajoled my siblings into agreeing on having a monthly Sunday dinner—something that is established and routine so that no matter what invitations roll in or events arise, we would say– “Sorry, I’ve got to pass—it’s my family dinner.”

Several weeks ago we kicked off our first family dinner and it was a great start to a new tradition. We cooked together (getting the kids involved, too), lounged about, sped “plasma cars” up and down the street, searched frantically for the eclipse, and of course–delved into some delish eats. Grilled steaks topped with blue cheese & fried onions, “dirty rice”, corn, bacon wrapped shrimp and strawberry pastries. YUM! Unfortunately our sister P  (who lives in SF) and our brother V and his family (who live in NYC) weren’t physically at dinner—they were sure there in spirit. Plus, I’m hoping they’ll plan their future visits so that it’ll land on a Sunday Family Dinner.

I’m pretty sure Mom would have loved the idea of us coming together to keep the family close—-and of course, that it’s an event that revolves around food. After all, we are her kids and the apple doesn’t fall far from the tree 🙂


This Month’s Family Dinner Menu

Cocktails:  Vino
Appetizers: Bacon wrapped Shrimp with Pesto
Entrees: Grilled Steaks topped with Bleu Cheese & Fried Onions, Dirty Rice, Corn
Dessert: Strawberry Pastries

Bacon wrapped Shrimp with Pesto

Ingredients:

1 Pound Shrimp, cleaned with tails left on (about 24-30)
12 Slices Bacon
Black Pepper
Cooking Spray

Pesto:
2½ Packed Cups Sweet Basil
½ Cup Roasted Pine Nuts, unsalted
2-3 Garlic Cloves, finely diced
½ Cup Grated Parmesan Cheese
Juice from 1/2 Lemon
Approximately ½ – ¾ Cup Extra Virgin Olive Oil
Kosher Salt and Pepper to taste

Soak wooden skewers in water for 10-15 minutes.

Prepare  the Pesto. In a food processor, pulse garlic and nuts. Add basil, cheese, lemon juice, and salt/pepper. With the food processor on, stream in olive oil and blend until the pesto is fully incorporated. Be sure to scrape down sides in between steps. More olive oil can be added if a smoother, loose texture is desired. Refrigerate until ready to be used.

Preheat your oven broiler.

Season the shrimp with black pepper. In batches, line a plate with paper towels and lay slices of bacon on top. Cover with additional paper towels and microwave for about 2 minutes so that the bacon is slightly cooked but still pliable.  Cut each slice of bacon into half and wrap the half around each shrimp. Skewer the shrimp in a fashion so that the bacon stays secure. Approximately 3 bacon wrapped shrimp should fit on a skewer. *Alternatively, you can use soaked toothpicks and secure each shrimp individually.

Place the skewers on a aluminum foil-lined baking sheet that has been lightly covered with cooking spray. Place the sheet directly under the broiler and cook the shrimp for 8-10 minutes (flipping halfway through) until the bacon has crisped and the shrimp have turned pink.

Slide the shrimp off the skewers and serve immediately with the Pesto.

Spanakopita….Phyllo Perfection.

I’m pretty much under the belief that you can wrap anything in buttery, flaky phyllo dough and it would be delicious.

Meat, veggies, fruit….a leather shoe. Whatever you can grab.

Now Spanakopita is on a whole different level. Suprisingly “simple” but utterly perfect. Crispy layers of phyllo stuffed with spinach, feta, onions, and spices…..Yum. I’ve even added mushrooms or sundried tomatoes to the party depending on my mood.

The key to working with phyllo is to cover the sheets with damp paper towels during assembly so that the sheets do not dry out or break. And you just can’t skimp out on the butter either. But why would you? 🙂

Formed as full-sized triangles as entrees or smaller bites for appetizers—-either way, your tummy will love you.

¼ Cup Olive Oil
1 Cup Chopped Yellow Onions
3 Scallions, chopped
2 (10 ounce) Packages Frozen Chopped Spinach, defrosted
4 Eggs, lightly beaten
3 Tablespoons Freshly Grated Parmesan Cheese
Plain Dry Bread Crumbs
1 Teaspoon Freshly Grated Nutmeg
1 Teaspoon Kosher Salt
1 Teaspoon Ground Black Pepper
2 Cups Feta Cheese, finely chopped
3 Tablespoons Toasted Pine Nuts
24 Sheets Frozen Phyllo Dough, defrosted
½ Cup Unsalted Butter, melted
Sea Salt

Preheat the oven to 375 degrees.

Heat olive oil in a medium sauté pan. Add the onion and cook for 5 minutes. Add the scallions and cook for another 2 minutes until the scallions are wilted but still green. Meanwhile, gently squeeze most of the water out of the spinach and place it in a large bowl.

When the onion and scallions are done, add them to the spinach. Mix in the eggs, Parmesan cheese, 3 tbsp. breadcrumbs, the nutmeg, salt, and pepper. Gently fold in the feta and pine nuts.

Place one sheet of phyllo dough flat on a work surface with the long end in front of you. Brush the sheet lightly with butter and sprinkle it with a teaspoon of bread crumbs. Working quickly, slide another sheet of phyllo dough on top of the first, brush with butter, and sprinkle lightly with bread crumbs. (Use just enough bread crumbs so the layers of phyllo don’t stick together.) Pile 4 layers on top of each other this way brushing each with butter and sprinkling each with bread crumbs.

Cut the sheets of phyllo in thirds lengthwise. Place 1/3 cup spinach filling on the shorter end and roll the phyllo up diagonally as if folding a flag. They fold the triangle of phyllo over straight and then diagonally again. Continue folding first diagonally and then straight until you reach the end of the sheet. The filling should be totally enclosed. Continue assembling phyllo layers and folding the filling until all of the filling (or all of the phyllo) is used.    Place on a sheet pan, seam sides down.   Brush with melted butter, sprinkle with flaked salt, and bake for 30 – 35 minutes, until the phyllo is browned and crisp.

Bánh Pa Tê Sô (also spelled Pâté Chaud) are deliciously flaky pies with a savory filling.

I know what you’re thinking. Puff pastry isn’t exactly among the first things that comes to mind when you think of Vietnamese cuisine. But, like the baguette and coffee, we’ve taken these items initially introduced by the French and have given them a Vietnamese makeover.

 

 

Bánh Patê Sô (Vietnamese Savory Meat Pies)

Bánh Pa Tê Sô are usually cut into round shapes but if you want to minimalize the waste of excess pastry dough, you can shape them into squares, rectangles, or triangles. But for the record, when I shape them into rounds, I never throw away the excess dough. Instead, I take the leftover strips, twist them and sprinkle the tops with cinnamon sugar before baking them. That way, I get a little sweet treat, too. Yum.

The pork filling I use is essentially a riff off of my Chả Giò (eggrolls) filling with the slight adjustments of a few things—such as the addition of peas. I also make a curry-lemongrass pork filling that is really fantastic with the buttery puff pastry, too. But whatever you choose to fill your Bánh Pa Tê Sô with, just be sure to not over stuff them or it will not cook through and may bulge out of the seams.

 

 

Bánh Patê Sô (Vietnamese Savory Meat Pies)

You can also freeze the pre-baked Bánh Pa Tê Sô. Just wrap them up individually with plastic wrap and freeze. Before baking, thaw them out to room temperature and bada-bing, bada-boom. Freshly baked Bánh Pa Tê Sô, whenever your heart desires.

Of course if you’ve got some time and ambition on your hands, homemade puff pastry dough would be ideal. I just don’t have that kind of patience and think the store bought pastry dough works just fine for me.

And no, that’s not cheating–despite what my sister, P, would say 🙂

Bánh Pa Tê Sô (Vietnamese Savory Meat Pies)

Ingredients:

1 Package Puff Pastry Sheets (typically contains two 10×15 inch sheets)
½ Pound Lean Ground Pork
¼ Cup Rehydrated Wood Ear Mushrooms, minced
¼ Cup Rehydrated Bean Thread Noodles, minced
¼ Cup Peas
1 Small Shallot, finely diced
1 Garlic Clove, finely minced
1 Tablespoon Fish Sauce
½ Teaspoon Ground Pepper
1 Egg, beaten

Preheat oven to 375 degrees F.

In a large bowl, mix together pork, mushrooms, noodles, peas, shallots, garlic, fish sauce and pepper until well combined.

Using a 3-inch ring biscuit cutter, cut rounds of puff pastry. Place one tablespoon of the filling in the center of one round and place another piece of puff pastry on top. Using the tines of a fork, crimp the edges of the rounds to seal the pastry. Transfer the Patê Sô to a baking sheet lined with parchment paper. Repeat with the remaining pastry rounds. Brush the tops of each Patê Sô with the beaten egg.

Bake the Patê Sô for about 20-25 minutes until golden brown. Enjoy!

But I must confess to you my friends. I am a severely LOYAL and sometimes insane FANATIC when it comes to my USC Trojans and Minnesota Vikings.

Buffalo Wings
Serves approximately 4

Ingredients:

2 Pounds Chicken Wings, separate wings at the joint with tips removed
½ Cup Unsalted Butter
¼ Cup Hot Sauce (I like to use Frank’s Red Hot Sauce)
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Cup All Purpose Flour
Vegetable Oil

Fill a large pot or dutch oven with about 2 inches of oil and heat until 350-375 degrees F.

While the oil is heating, toss the chicken in the flour. Shake off excess flour and carefully fry the wings in the heated oil for about 3-4 minutes on each side and until they become golden brown. This may need to be done in batches to not overcrowd your pot.

When the last batches of wings are frying, melt the butter in a small sauce pan. Remove from heat and stir in garlic powder, onion powder, and hot sauce. When the wings have all been fried, toss them with enough of the butter-hot sauce mixture until the wings have been well coated. Serve warm with blue cheese dressing, carrot sticks, and celery sticks.

Bruschetta with Smoked Mozzarella Cheese

For a good chunk of my life, I didn’t like tomatoes.

I thought they were mealy and rather “bleh” in flavor. I’d pick them out of salads, burgers, well….pretty much out of everything.

And you know what the problem was? For the first 20+ years of my life, I was eating BAD tomatoes!

Because when you take a bite out of a gorgeous tomato at its peak in the season, it’s absolutely delicious! They’re sweet and juicy with the right balance of acidity. And last summer, I even found myself growing the most beautiful Early Girl Tomatoes via our Topsy Turvy. (For the record, the Topsy Turvy is awesome!)

Needless to say, I was missing out for so many years!

 

 

Bruschetta with Smoked Mozzarella Cheese

One of my favorite ways to enjoy fresh tomatoes are in Bruschetta. The simplicity of ingredients paired with the herbaceous basil  really highlights the true flavor of the tomato. On its own, it’s quite fabulous but I decided to add a spin by throwing in some smoked mozzarella cheese I stumbled on at my local specialty market. It was perfect!

And on warm summer nights like we’ve been having, I could eat Bruschetta every day! Mom would be proud that I’m eating my veggies 🙂

Bruschetta with Smoked Mozzarella Cheese
Serves 4 as an Appetizer or 2 for a Light Meal

Ingredients:

1½ Cups Tomatoes, diced
½ Cup Smoked Mozzarella Cheese, cubed
¼ Cup Fresh Basil, leaves torn
1 Garlic Clove, finely minced or grated
1 Tablespoon Good Quality Balsamic Vinegar
1 Tablespoon Good Quality Extra Virgin Olive Oil
Kosher Salt and Black Pepper

In a bowl, mix together the tomatoes, cheese, basil, garlic, vinegar, and oil. Season with salt and pepper. Cover and refrigerate for at least 20 minutes. Taste and adjust seasonings accordingly. Serve with your choice of flat bread or toasted baguettes.

Fried "Buffalo" Calamari

The other day I came home to a package that had a big bottle of KC Masterpiece® Buffalo Marinade in it—-courtesy of the Foodbuzz Tastemakers Program.

I immediately thought of whipping up a batch of Buffalo Wings….because who doesn’t love a good Buffalo Wing? But at second thought, I decided to try something different and take a spin off of another great pub food—Fried Calamari!

I attempted to mimic the Buffalo Wing taste by marinating the calamari in buttermilk and KC Masterpiece® Buffalo Marinade. After a quick toss in flour and a few minutes of deep frying, I had a plate full of crispy–yet tender, Fried Calamari.

I’m not sure I fully tasted the flavors of the marinade in the Calamari by itself. But after a little squeeze of lemon and quick dunk into the Buffalo Marinade, the flavors were definitely more prominent.

But let’s be honest, anything fried and then dipped in hot sauce is pretty delicious in my book 🙂

Fried “Buffalo” Calamari
Serves 4

Ingredients:

1 Pound Calamari, cleaned and cut into 1 inch rings—tentacles left whole
1 Cup All Purpose Flour
¾ Cup KC Masterpiece® Buffalo Marinade, or other hot sauce marinade
¼ Cup Buttermilk
1 Teaspoon Kosher Salt, plus more to season after the calamari is fried
½ Teaspoon Black Pepper
Vegetable Oil, for deep frying
Serve with Celery and Carrot Sticks, additional KC Masterpiece® Buffalo Marinade, Blue Cheese Dressing, and Lemon Wedges


In a large bowl, mix the marinade and buttermilk together. Add the cleaned calamari—ensuring it’s well covered in the liquid. Cover the bowl with plastic wrap and place in the refrigerator for at least 45 minutes.

Place a large colander in the sink and pour the calamari with buttermilk mixture into it. Gently shake the colander to drain off the marinade. Use paper towels to blot off excess liquids.

In a large pot (or deep fryer), preheat oil to 375 degrees.

In a large zip lock bag, add the flour, salt, and pepper. Add the calamari zip the bag closed. Shake well to evenly coat the calamari. Pour the contents of the bag into a large sifter (or you can do this in batches) and sift the calamari to get rid of any extra flour. In batches, carefully add the calamari into the hot oil and cook for about 3-4 minutes or until lightly golden and crispy.

Transfer the fried calamari to a paper towel lined plate and sprinkle with additional salt. Repeat until all the calamari has been fried.

Serve immediately with celery and carrot sticks, additional KC Masterpiece® Buffalo Marinade, Blue Cheese Dressing, and lemon wedges
