Summer has been beating down my door lately with gorgeous sunny days and warm weather. And of course, what’s better to do in the summer than grilling up some delicious eats?

So when this glorious box of Farmer John Jalapeno Bacon showed up at the doorstep, it was a no brainer what had to be done.

These decadent burgers are not only topped with a pile of crispy jalapeno bacon but there’s also chopped up bacon INSIDE the patty!!

Yea, I totally went there.

And because burgers are the perfect canvas to go BIG, I dressed these bad boys up with spicy pepper cheese, crispy cornmeal onion strings, peppery arugula and a creamy roasted poblano aioli.

These burgers not only have a ton of great textures, a balanced level of heat, but were ultimately bacon-licious! The jalapeno component to the bacon was not at all overpowering but rather mild. Perfect for folks who just want a tad of heat.

Double Jalapeño-Bacon Cheeseburgers with Roasted Poblano Aioli
Serves 4

Ingredients:

1 large poblano pepper
½ tablespoon minced garlic
1 cup mayonnaise
½ tablespoon Dijon mustard
½ tablespoon fresh lemon juice
1 tablespoon finely chopped fresh cilantro
kosher salt
black pepper
1 pound ground beef (80/20 blend)
½ tablespoon garlic salt
½ tablespoon garlic powder
½ tablespoon onion powder
¼ teaspoon cayenne powder
1 tablespoon worcestershire sauce
1 pound cooked jalapeno bacon
vegetable oil
1 small yellow onion, thinly sliced into rings
½ cup flour
½ cup yellow corn meal
4 slices pepper jack cheese
1½ cups fresh arugula
4 burger buns, split and toasted

Prepare the aioli. On your stovetop range, char the poblano pepper on all sides. This can also be done under your oven broiler. Once charred, place in a bowl and cover with plastic wrap for 10 minutes. This will help the skin loosen from the pepper. Once cooled, peel the skin from the pepper and discard along with the stem and seeds. Finely chop up the pepper and transfer to a clean bowl. Whisk in the garlic, mayonnaise, mustard, lemon juice and cilantro. Season with kosher salt and pepper. Cover with plastic wrap and refrigerate for at least one hour.

In a large bowl, mix the ground beef, garlic salt, garlic powder, onion powder, cayenne and Worcestershire. Season generously with kosher salt and pepper. Take ½ of the bacon and roughly chop into small pieces. Add the bacon to the beef and mix until just combined. Form the meat into 4 patties and create a small indentation in the center of each patty. This is to help the patties from puffing up. Transfer them to a plate and refrigerate for about 30 minutes.

Prepare the onion strings. Fill a heavy bottomed pot with 2 inches of oil. Heat to 375 degrees F. In a bowl, whisk together the flour, cornmeal, ¼ teaspoon black pepper, and ½ teaspoon kosher salt. In batches, place the onions into the dry ingredients, tossing well to coat. Gently shake out the excess and carefully lower into the oil. Fry the onions for about 5-6 minutes, stirring every so often until golden brown. Drain the onions on a plate lined with paper towels and season immediately with additional salt. Repeat until all the onions have been fried. Transfer the onion strings to a large baking sheet. Keep warm in a 200 degree F oven while you grill the patties.

Remove the patties from the refrigerator and lightly brush them with vegetable oil. Light your grill (or preheat grill pan). Place the patties over medium heat and grill on each side for about 4-5 minutes. About 1-2 minutes before the second side is done, lay one slice of cheese over each patty. Cover the grill and cook until the cheese has melted. Remove the patties and tent with aluminum foil while you’re assembling the burgers.

On a toasted bun, place a small mound of the arugula and then lay a patty on top. Spread a few spoonfuls of the aioli on top of the patty before adding a few strips of the remaining bacon. Next, add a small pile of the crispy onion strings and then top off with the other side of the bun. Serve immediately.

Italian Sausage & Mushroom Skillet Lasagna
Serves 6

Ingredients:

3 tablespoons olive oil, divided
1 pound spicy Italian sausage
2 cups sliced crimini mushroom
1 cup diced white onions
1/4 cup chopped scallions
1 tablespoon minced garlic
¼ teaspoon fennel seeds
½ teaspoon red pepper flakes
2 tablespoon tomato paste
3 16-ounce cans San Marzano tomatoes
10 ounces dried lasagna noodles (about 2/3 of a regular sized box)
1½ cups chicken or vegetable stock
½ cup grated parmesan cheese
kosher salt and black pepper
6 ounces fresh mozzarella cheese, thinly sliced
½ cup fresh basil leaves, torn into pieces

In a large skillet that has a lid; heat 2 tablespoons of olive oil to medium heat. Removed the casing from the sausage and add to the skillet. Using a wooden spoon, break up the sausage and cook until lightly brown. Add in the mushrooms and cook for an additional 3-4 minutes until the mushrooms have softened. Remove the sausage and mushrooms to a clean plate.

Add an additional tablespoon of oil to the skillet and cook the onions until softened and translucent. Add the garlic, fennel seeds and red pepper flakes and cook for 1 minute before adding in the tomato paste. Allow the mixture to cook for an additional minute to allow the items to become aromatic. Transfer the sausage and mushrooms back to the skillet and stir to combine.

Using a blender or immersion blender, puree the tomatoes with its juices until smooth.

Break the lasagna noodles into 1-2 inch pieces and layer on top of the ingredients in the skillet. Pour the pureed tomatoes and chicken stock over the noodles. Allow the liquids to come to a slight boil. Cover and simmer the lasagna for 20-25 minutes, stirring every few minutes. Continue cooking until the noodles become al dente.

Remove from heat and stir in the parmesan cheese. Season with salt and pepper and lay pieces of mozzarella over the top. Garnish with basil leaves and serve warm.

**If you would like a bit of crunch, turn on your oven broiler after placing the mozzarella cheese and place the skillet about 4 inches away from it. Allow to brown for about 30-45 seconds but be sure to keep an eye on it to avoid burning the lasagna.

Spicy Chicken Flautas – ¡Olé!

I’m kind of a fanatic when it comes to Mexican food. And lucky for me, I live in San Diego where I can get lots of it!

There’s something wonderful about the cuisine that really strikes the perfect balance in each dish. Bright, rich….acidic, salty….spicy, sweet. And the condiments—oh, the condiments! So many options to accompany each bite.

Just perfecto!

Spicy Chicken Flautas

When I’m not ordering fish or al pastor tacos, I’m reaching for a plate of flautas–crispy rolled tacos.

Now here’s the million dollar question. Are they “flautas” or “taquitos”?

I’ve done some research on the matter (okay, I’ve just Googled it and have asked every restaurant I order them from) and there seems to be some mixed thoughts. One school of thought believes that when corn tortillas are involved they become taquitos and are called flautas when flour tortillas are used. Some say it depends on the size and others say it’s regional.

So since I use flour tortillas, I’ll call mine flautas 🙂

And in my humble opinion, what makes a great flauta is not just a crispy exterior but also one that has a really flavorful filling. I start by roasting bone-in chicken breasts that have been seasoned with tons of spices. After shredding it, I combine it with sauteed aromatics, herbs, more spices and lots of cheese.

I’m a big fan of using Sargento’s Mexican Cheese as it contains a blend of Monterey Jack, Cheddar, Queso Quesadilla and Asadero cheeses. More types of cheese = more flavor.

Of course, one shouldn’t enjoy flautas without fantastic sides. I serve mine with fresh pico de gallo, luscious guacamole and a dollop of sour cream to cool down the spices.

And with that Friends, you’ve got a meal with the perfect symphony of flavors! ¡Olé!

Spicy Chicken Flautas
Serves 4

Ingredients:

2 chicken breasts, bone-in and skin on
2 tablespoons olive oil, divided
¾ tablespoon garlic salt, divided
¾ teaspoon ground cumin, divided
¾ teaspoon cayenne pepper, divided
1½ teaspoons onion powder
½ teaspoon black pepper, divided
1½teaspoons kosher salt, divided
1 cup diced white onion
1 jalapeno pepper, minced*
1 serrano pepper, minced*
1 tablespoon minced garlic
¼ cup chopped cilantro
2 scallions, chopped
1 tablespoon lime juice
1½ cups Sargento® shredded 4-Mexican Cheese, or cheeses of your choice
vegetable oil
12 small flour tortillas

Preheat oven to 350 degrees F.

Coat the chicken breasts with 1 tablespoon olive oil. Sprinkle the chicken with ¼ tablespoon garlic salt, ¼ teaspoon cumin, ¼ teaspoon cayenne pepper, 1 teaspoon onion powder, ¼ teaspoon black pepper, and 1 teaspoon kosher salt. Use your hands to rub each chicken breast to thoroughly distribute the oil and seasonings. Place the chicken on a rimmed baking sheet and roast for 40-45 minutes or until the thickest part of the breast reaches 165 degrees F. Once cooled, remove and discard the skin and bones. Shred the chicken into small pieces and place in a large bowl.

Heat a skillet to medium heat and add the remaining olive oil. Sauté the onions, jalapeno and serrano until the onions are just translucent. Add the garlic and sauté for an additional minute. Transfer the mixture to the bowl with the shredded chicken.

To the chicken, add the remaining garlic salt, ground cumin, cayenne pepper, black pepper, and kosher salt. Stir in the cilantro, scallions, lime juice and cheeses until combined.

Heat a heavy bottomed pot with 2 inches of vegetable oil to 375 degrees F.

Working in batches, place 2 heaping spoonfuls of the chicken mixture in the center of each tortilla. Tightly roll up each tortilla and use toothpicks to secure them closed. You may need to slightly heat the tortillas so that they become pliable to roll.

Fry the flautas for 2-3 minutes until they become golden brown. Transfer to a platter lined with paper towels to drain off the excess oil. Serve warm with pico de gallo, guacamole and sour cream.

*The amount of peppers can be adjusted depending on heat preference.

You can use whatever types of pears you like but I find that either Bartletts or Anjous work out best. I also put a light honey-glaze to provide a little bit of sweetness and a sheen. As for the pomegranates, they added a great freshness and crunchy texture while giving a bit of tart flavor. Alternatively, you can sprinkle the tops with crushed pistachios.

Not only are these tarts eye-catching and delicious but they only take a few minutes to put together! Perfect for holiday entertaining when I always seem like I’m racing the clock.

Pomegranate-Pear Tarts
Serves 4

Ingredients:

1 sheet puff pastry, thawed
2 tablespoons all-purpose flour
2 Bartlett or Bosc Pears, cored and sliced lengthwise to 1/8 inch width
2 tablespoons honey
1 tablespoon warm water
¼ cup pomegranate arils
fresh whipped cream or ice cream, optional

Preheat oven to 400 degrees F.

On a lightly floured surface, gently roll the puff pastry to 1/8 inch thickness. Cut the sheet into 4 equal squares.

Transfer the puff pastry to a parchment paper lined baking sheet, leaving ample space in between each square.

Leaving a ½ inch border of the puff pastry around each square, shingle the pear slices so that all 4 pieces have been covered. Gently fold over the dough on each side of the squares and pinch the corners to seal.

In a small bowl, mix the honey and water together until combined. Brush the tops of the pear slices with the honey glaze. Transfer the baking sheet into the preheated oven and bake for 25-30 minutes until the pastry is golden brown. Rotate the sheet halfway through baking.

Remove the tarts from the oven and cool on the sheet for 5 minutes. Sprinkle the tarts with the pomegranate arils and serve immediately with fresh whipped cream or ice cream.

With Autumn finally coming around, it was the perfect time to make an apple version highlighting the warm spices of cinnamon and nutmeg. And the only thing to take it over the top was a decadent drizzle of Caramel flavored by good ol’ Bourbon.

Inspired by my visit with the great o’hana of King’s Hawaiian, I used the slightly sweet Original Hawaiian Sweet Round Bread for the pudding. I also cut back on the amount of sugar in the custard base since the final dessert would be sweet enough from the luscious Caramel Bourbon sauce.

Apple Bread Pudding with Caramel Bourbon Sauce

Ingredients:

Caramel Bourbon Sauce:
1 Cup Granulated Sugar
¼ Cup Water
4 Tablespoons Unsalted Butter, cut into cubes
¼ Cup Heavy Cream
2 Tablespoons Bourbon
Sea Salt (optional)

Bread Pudding:
2 Large Eggs, beaten
¾ Cup Milk
¾ Cup Heavy Cream
½ Cup Light Brown Sugar
¼ Teaspoon Ground Cinnamon
3-4 Pinches Nutmeg
2 Pinches Salt
1 Tablespoon Vanilla Extract
6 Cups Kings Hawaiian Sweet Bread, cubed and toasted (Brioche can be substituted)
1 Cup Apples, cubed (I chose a mix of Granny Smith and Fuji)
Additional Unsalted Butter to grease the pan
Fresh Whipped Cream (optional)

In a heavy bottomed saucepan, dissolve the sugar and water over medium-high heat. Once the liquids begin to bubble, swirl the saucepan around and continue cooking until it reaches an amber color. Reduce the heat to low and whisk in the cubes of butter one at a time until fully incorporated. Remove from heat and whisk in the heavy cream. (The liquids will bubble up so be careful!) Stir in the Bourbon and a few pinches of sea salt (optional). Set aside.

Preheat oven to 350 degrees F and thoroughly butter the bottom and sides of an 8×8 inch pan.

In a large bowl, whisk together the first 8 ingredients of the bread pudding. Add in the cubed bread and apples making sure that they have been coated by the custard mixture. Let set for 5 minutes to allow the bread to absorb some of the custard. Pour the entire contents into the greased pan and spread evenly. Take a few spoonfuls of the Caramel Bourbon Sauce and drizzle on the top. Bake the Bread Pudding in the preheated oven for approximately 35-40 minutes until the custard has set and the top is golden brown. Remove from the oven and allow to slightly cool before cutting. Serve warm with additional sauce drizzled on top and fresh whipped cream.

After our glorious day at King’s Hawaiian, the wonderful KH ‘Ohana sent us home with a huge box of goodies to fill our kitchen and tummies. ONO-licious!!!

I couldn’t wait to try out different recipes with the delicious products and I started off with an island inspired French Toast.

While daydreaming about warm, tropical beaches I whipped up a batch of French Toast utilizing island based ingredients– coconut, guava, and of course– King’s Hawaiian Bread.

The slightly sweetened bread soaks up the perfect amount of custard base to yield a rich and creamy center. I also chose to coat the toast with Coconut Crunch pieces but if you can’t find it, non-toasted coconut flakes will also work well to create a wonderful texture.

And after all this island goodness, I couldn’t bear the thought of settling for maple syrup. Lucky for me I had some guava puree on hand and was able to make a quick syrup. It was PERFECT!!!

Perhaps we all can’t be whisked away to some beautiful tropical paradise at any given moment but at least our tummies can be transported there with some Coconut Crunch French Toast and Guava Syrup.

Coconut Crunch French Toast with Guava Syrup
Serves 2

Ingredients:

Guava Syrup
1 Cup Guava Puree
1 Cup Water
1 Tablespoon Palm Sugar

French Toast
2 Large Eggs
1 Cup Milk
¼ Cup Heavy Cream
2 Tablespoons Light Brown Sugar
½ Tablespoon Vanilla Extract
½ Teaspoon Ground Cinnamon
2-3 Pinches Ground Nutmeg
4 Slices Kings Hawaiian Sweet Bread, about 1 inch thickness (Brioche can be substituted)
1 Cup Coconut Crunch Pieces (Coconut flakes can be substituted)
Confectioners’ Sugar for dusting
Vegetable Oil
Butter

Prepare the Guava Syrup by adding all the syrup ingredients into a small saucepan and bring to a light boil, stirring frequently. Once at a boil, lower heat to a simmer and cook down until the syrup is thickened and reduced by half. Remove from heat and warm prior to serving.

In a large bowl, whisk eggs, milk, heavy cream and sugar together. Add in the vanilla extract, cinnamon, nutmeg and whisk until the sugar has dissolved and all items have combined. Pour the Coconut Crunch pieces into a shallow dish.

In a large skillet, melt 2 tablespoon of butter and 1 tablespoon of oil over medium-low heat. Swirl the skillet to evenly coat the bottom. While the skillet is heating, dip the slices of bread into the egg mixture, coating each side. Lightly shake off the excess liquids and coat each side of bread with the Coconut Crunch pieces– gently pressing the coconut into the bread. Once coated, slide the bread into the heated skillet. This may need to be done in batches depending on your skillet size. Cook each side of the French Toast for 3-4 minutes until golden brown.

Plate the French Toast and dust lightly with confectioner’s sugar. Serve immediately with the warmed Guava Syrup.

In 1950, Robert Taira, opened up a bakery in Hilo, Hawai’i featuring delicious baked goods inspired from his neighbor’s ONO Portuguese bread. After much determination and ambition, Kings Hawaiian has not only become the number one dinner roll in the country but also offers delicious local grindz and pastries.

So you can imagine my utter glee when I accepted their invitation to participate in their first EVER public tour!!!! Chhheeeee-Hoooooo!!

After being warmly greeted with fresh floral leis, POG juice and fresh fruit, we were given an Aloha from Kings Hawaiian’s CEO, Mark Taira. Mark and the ‘Ohana, gave us an overview of the history of KH and where the organization was headed. And before the bread comatose kicks in, let me say, that the KH organization truly exudes the spirit of Aloha.

I have had the fortunate privilege to spend some time in Hilo. And unlike it’s hustle-bustle sister-city of Honolulu, Hilo is a little slower paced and focuses on communal-‘ohana living. And I’m proud to say that the organization of Kings Hawaiian exudes every part of that.

We were then privy to a first hand tour of the factory and OH….MY…GAWD.

Words CANNOT begin to describe the delicious aromas that filled ALL of my senses. It took EVERY ounce of will power for me to not reach over the belts and grab a roll.

And lucky for us at the end of our factory tour, our group was able to sample fresh rolls that were steaming HOT right out of the ovens, pulled from the conveyer belts, and into my mouth. Good grief! Did I mention that we slathered them with butter?!

At that point, I had died and gone to heaven.

We were then escorted to an amazing luncheon featuring local food trucks who used King Hawaiian products in their dishes. SERIOUSLY!?!

Lobsta Truck, Kogi BBQ, Ludo Truck, Buttermilk Truck and ONO grindz from Kings Hawaiian! Everything was so flipping ONO-LICIOUS that my only question was–Why didn’t someone tell me to wear elastic waistband pants?!?

Everything I tasted hit a note that made me do a Happy Dance.

At the end of the day, I walked away with the following:

  • What makes Kings Hawaiian stand out from the rest is their impeccable quality and TRUE Aloha Spirit;
  • Their products taste FANTASTIC with EVERYTHING;
  • Never doubt that a business model of ‘Ohana can create an AMAZING organization.
