Tons of mint chocolate chip ice cream blended with Baileys Mint Chocolate Irish Cream and topped with swirls of mint flavored whipped cream. Green, minty deliciousness!

Boozy Mint Chip Shakes
Serves 2

Ingredients

Mint Flavored Whipped Cream
½ cup chilled heavy cream
½ tablespoon sugar
2 drops mint extract

Shake
2 heaping cups mint chocolate chip ice cream
1 cup milk
1 tablespoon malt powder
2½ ounces Baileys Mint Chocolate Irish Cream
1-2 drops green food color (optional)
Sprinkles

Prepare the whipped cream. Using a standing mixer fitted with the balloon whisk attachment, whip the chilled heavy cream on high until it just holds stiff peaks. Slowly sprinkle in the sugar until you reach a thick consistency. Add in the mint extract and whip until combined.

In a blender, combine ice cream, milk, malt powder, Irish cream and food color (optional). Blend until the mixture is smooth and combined.

Pour the shake into two chilled glasses and top with swirls of whipped cream. Add sprinkles and enjoy!

HOLY COW!!! I almost missed it—again! But thanks to my fab Twitter feed, I was reminded in the nick of time that today is…….. π (Pi) Day!!!!

Yup, the mathematical constant π (Pi) that is approximately 3.14159 is celebrated every year on March 14th. 3/14 = 3.14 Get it????? Oh so clever!

So, what does one do to celebrate π Day? Well– I guess if you’re a big math fanatic, you may spend your day racing through equations or preparing for the next Math Olympics. OR you can spend your day baking and eating delicious pies.

Seeing how I’m rather mathematically inept, I chose the latter and made these fun Mixed Berry Hand Pies. Crispy, flaky crust filled with tart fresh berries. Scrumptious!

And in case you’re feeling extra naughty today, you can choose to deep fry the hand pies instead of baking them. Why the π not?

Mixed Berry Hand Pies
Makes 10-12 pies

Ingredients:

2 cups diced fresh strawberries
1 cup diced fresh blackberries
½ teaspoon lemon zest
seeds from ½ vanilla bean pod
1½ tablespoons sugar (more if berries are too tart)
1½ teaspoons cornstarch
flour for dusting
1 pound pie dough*
1 egg, beaten
1 tablespoon heavy cream or water
powdered sugar

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or silicon mat.

In a bowl, gently mix together the berries, lemon zest, vanilla beans, sugar and cornstarch. Depending on the sweetness of the berries, more sugar may be added. Set aside.

Dust a workspace with flour and roll the pie dough to about 1/8 inch thickness. Use a 5-6 inch round cookie cutter to cut circles out of the dough. Place about 2 spoonfuls of the berry mixture in the center of a pastry circle. Fold over the dough to cover the filling and gently press the edges together to seal. You may also use a fork to crimp the edges to secure the seal. Repeat with the remaining dough.

Transfer the hand pies to the baking sheet. In a small bowl, whisk together the egg and heavy cream/water. Brush the tops of the hand pies with the egg wash and make a small nick with a sharp knife on top to allow the steam to release while the pies bake.

Bake the hand pies for 20 minutes or until golden brown. Don’t worry if some of the berry filling bubbles out. Once done, allow the hand pies to cool on racks for about 10 minutes. Dust the hand pies with powdered sugar and serve.

Fried Option: If you opt to deep fry your hand pies, do not brush them with the egg wash or cut an air vent in the filled pies. Once formed, refrigerate them for at least 20 minutes. Fill a heavy bottom pot with 2 inches of vegetable oil and heat to 375 degrees F. In batches, fry the hand pies for 1-2 minutes on each side or until golden brown. Transfer the hand pies to cooling racks to drain excess oil. After 5 minutes, dust them with powdered sugar and serve.

*When it comes to pie dough, I’m a big fan of using Cook’s Illustrated’s Foolproof Pie Dough recipe or Martha Stewart’s Patee Brisee recipe. Both yield great results AND they’re both ideal to make double batches of to freeze when you need them.

More times than not, I’ve got a lot to say about everything. And when it comes to food– fuggedaboutit!

But then there are times when I take a bite of something and there are really just no words needed. Like with this Spicy Crab and Avocado Salad. MMMMMMM!!!!!!

TONS of sweet lump crab meat, paired with the creaminess of avocado, a slight crunch from the serranos and a kick of spice. Perfection!

Okay, okay. Maybe I do have a few words but trust me, one bite and you’ll know exactly what I mean.

By the way, in case you’re wondering–Why do I call this a “crab salad”? Well…the same reason why they call chicken salad, “chicken salad”. And yes, I may be trying to avert the question. 🙂

Spicy Crab and Avocado Salad
Serves 2

Ingredients:

5 ounces cooked lump crab meat
1 scallion, diced
1 teaspoon finely minced serrano pepper
1 tablespoon mayonnaise
1 teaspoon hot sauce
½ tablespoon lime juice
¼ teaspoon Old Bay Seasonings
kosher salt and pepper to taste
1 large avocado, halved and seeded
garnish with chives and additional Old Bay Seasonings

In a bowl, gently combine the crab, scallion, serrano pepper, mayonnaise, hot sauce, lime juice and Old Bay Seasonings. Taste and season with additional salt and pepper. Refrigerate the crab mixture for 30 minutes.

Spoon half of the crab mixture into each of the avocado halves. Sprinkle with a dash of Old Bay Seasonings and top with chives. Enjoy!

I love experimenting with new recipes. It’s challenging, fun and when the dish is successfully completed, it’s totally gratifying.

One of my fav grilled cheeses is so simple but deliciously satisfying. It’s made with Kings Hawaiian sliced bread that has been lightly buttered and then grilled with pepper jack cheese, thin slices of Roma tomatoes, sliced avocados, and a thin spread of grainy mustard. So.Freaking.Good.

Samoa Cupcakes…and those savvy Girl Scouts

When it comes to cookies, I’ve always believed that the Girl Scouts could hustle. I mean, c’mon now. Adorable little girls, pleading for some philanthropic cause while slinging delicious cookies. A no brainer!

And every year, you could always count me in for at least a box or two of those delectable bites. But alas, two years ago, my fate was sealed.

Yup. My niece, Maya, had joined the Scouts. I was in trouble.

Although, more accurately, I think she started as a “Daisy”—a neophyte Girl Scout, I think. Thus my 1-2 boxes of cookies has now grown to 6, 7, 8….. Ugh–you get my drift.

But how can you really blame me? I’m a sucker for my little buggers and when they’ve got cookies, I’ve got no chance.

The cookies are delicious on their own and even frozen. But every so now and then, I try to rework the beloved Girl Scout cookie into a cupcake like my Tagalong Cupcakes (a cookie on the bottom and top), Thin Mint-Chocolate Cupcakes (cookies in the batter and on top), and finally these Samoa Cupcakes.

These cuppies are my tribute to the Samoa Cookie (and Maya)—a chocolate cupcake topped with a caramel cream cheese frosting, rolled in toasted coconut flakes, topped with a chocolate drizzle and half a Samoa cookie. Yup…I went there.

So friends, as long as Maya is a Scout, you can count on an annual Girl Scout themed cuppie. With that said, anyone else having flashbacks of Shelley Long in Troop Beverly Hills?

Samoa Cupcakes
Makes approximately 2 dozen cupcakes

Ingredients:

Cupcake Batter
5 ounces dark chocolate, finely chopped
1 cup strongly brewed hot coffee
½ cup unsweetened cocoa powder
2 cups all purpose flour
1½ teaspoons baking soda
½ teaspoon baking powder
1 cup + 2 tablespoons granulated sugar
1 teaspoon salt
2 large eggs
¾ cup vegetable oil
1 cup buttermilk
2 teaspoons vanilla extract

Caramel Cream Cheese Frosting
16 ounces cream cheese, at room temperature
8 tablespoons unsalted butter, at room temperature
3 heaping tablespoons caramel sauce
4-5 cups sifted confectioner sugar (varies due to preferred frosting consistency)

Toppings
1½ cups toasted coconut flakes
¼ cup melted chocolate
12 Samoa® Cookies, sliced in half

Preheat oven to 350 degrees. Place paper liners in muffin pans.

Place finely chopped chocolate in a bowl and pour hot coffee over it. Cover bowl with plastic wrap and allow to sit for 1-2 minutes. Remove plastic and stir until smooth.

Sift together cocoa powder, flour, baking soda, baking powder, sugar, and salt into a large bowl. In electric mixer fitted with the paddle attachment, beat eggs until it becomes pale yellow. Beat in oil, buttermilk, and vanilla extract. Scrape down the sides of the bowl and slowly incorporate the melted chocolate. In increments, add the dry ingredients and mix until just incorporated. Pour batter into the lined cups–about 3/4 way. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool in the pans for 5 minutes before removing to cooling racks.

In an electric mixer fitted with the paddle attachment, whip together the cream cheese and butter until fluffy. Add caramel sauce and then gradually add in the confectioners’ sugar, ¼ cup at a time. Continue adding sugar until desire consistency.

Fill a pastry bag and pipe frosting on top of cooled cupcakes. Roll the tops of the cupcakes in the toasted coconut flakes. Drizzle the melted chocolate over the tops and then garnish with ½ a Samoa® cookie. Enjoy!

Toasting the Oscars with a “Sparkling Tangerine Tiger”

I adore Oscars Season. The movies, the glitz, the fashion, the glamor, the festivities….

And like the Superbowl, I usually do a spread of my picks for the awards.

At this point, I’ve watched 7 out of the 9 nominees for Best Picture. Not too shabby right?

And since I’m having a little shindig at mi casa to watch the event, my pals and I attempted to create a menu as an homage to some of the films:

To pair with our Oscars bites, I wanted to serve my guests with a cocktail…..or two, or three.

As my nod to Life of Pi, I’ll be shakin’ up a refreshing cocktail using Bombay Sapphire Gin, fresh tangerines, limes, raw sugar, mint and a good dose of sparkling wine. Peppery, bright, refreshing, and just plain lovely. After much consultation from my cocktail lovin’ peeps, I’ve dubbed this concoction, the Sparkling Tangerine Tiger.

Sparkling Tangerine Tiger Cocktail
Serves 2

Ingredients:

1/2 tangerine, cut into small wedges
1/2 lime, cut into small wedges
10 fresh mint leaves
1 tablespoon raw sugar
2 1/2 ounces Bombay Sapphire
ice
6 ounces sparkling wine
*garnish with additional mint leaves, lime wedges and tangerine wedges

In a shaker, muddle the tangerine, lime, mint and sugar. Add the gin and shake well.

Fill two glasses with ice. Strain and divide the liquids amongst the two glasses. Top each glass with 1/2 of the sparkling wine. Garnish with citrus wedges and mint leaves.

I’ve been rather bad about reporting on our Family Dinners over the past few months. And not because our menus weren’t delish but somehow amongst the endless events, time slipped by.

December’s dinner menu featured Mexican-inspired fare. We had a variety of fresh salsas, chicharrón, ceviche, salmon-dill tacos, rice, and beans. I whipped up some mango margaritas and my beer braised carnitas. And although it may not have been Latin, our sis, P, made a ridiculously amazing chocolate bread pudding. The icing on the cake? It was our adorable nephew, Leonidas’ 1st birthday!

February Family Dinner

For January, we let my seester, T, and our niece pick the theme as they’re Jan-Babies. So we were off to the islands for mouthwatering, ono grindz! Our spread included mai tais and my take on hamachi-ponzu shooters. Our eldest seester created a wonderfully light yet fulfilling banana leaf-wrapped monk fish with a curry sauce. And for dessert? Big seester made molten lava chocolate cakes and paired them with my toasted coconut ice cream and guava ice cream.

With island music playing throughout dinner, it was almost—almost like we were in Hawai’i. <le sigh….>

Rosemary-Garlic Lamb Rib Chops

For this month, we revisited Italia. Big seester got me a ravioli mold for Christmas and we were eager to give them a try. For our entrées, we had raviolis three ways: butternut squash with brown butter sage sauce, spicy sausage with a marinara sauce, and lump crab with a pesto sauce. They were quite the success considering it was our first time making raviolis. And because I learned from October’s Family Dinner, I invested in a hand crank pasta machine. Best…idea…ever.

Since I knew it was going to take us some time to get the raviolis to the dinner table, I wanted to make a heartier-than-usual appetizer. We’re a big fan of lamb chops so I turned to my trusted recipe using a ton of rosemary and garlic. By slicing the racks into rib chops while giving them ample time to marinate, the lamb is able to seep in a ton of great flavor. And because my fam loves condiments, I made a quick and herbaceous gremolata to pair with the lamb to help brighten the gamey flavor.

We also found that a light sprinkle of sea salt over the rib chops not only added the perfect seasoning but it also added some great texture. My fam gobbled these appetizers up in no time flat but they can also be served as a mouthwatering entrée.

Rosemary-Garlic Lamb Rib Chops
Serves 4-6

Ingredients:

Lamb
½ cup chopped rosemary
2 heaping tablespoons minced garlic
zest of 1 lemon
1 teaspoon red chili flakes
¼ cup extra virgin olive oil
16 lamb rib chops, Frenched and trimmed (approximately 2 Frenched racks)
kosher salt and black pepper

Gremolata
1 cup chopped Italian parsley
¼ cup fresh basil
2 garlic cloves, chopped
2 tablespoons lemon juice
¼ teaspoon red chili flakes
½ cup extra virgin olive oil
kosher salt and black pepper

Optional
sea salt

In a small bowl, mix together the rosemary, garlic, lemon zest, red chili flakes and olive oil. Place the lamb rib chops in a large shallow dish or gallon sized resealable bags. Season the lamb well with kosher salt and black pepper. Pour the herb mixture over the lamb and turn the chops around to coat well. Cover and refrigerate for 6-8 hours (I like mine to marinate overnight).

Prepare gremolata by adding parsley, basil, garlic, lemon juice, and red pepper flakes into a food processor. Pulse to combine. On low, stream in the olive oil until you reach a smooth consistency. Season with salt and pepper.

Remove the lamb 15 minutes before cooking. Preheat grill to medium high. Grill the chops on each side for 2-3 minutes until the internal temperature reaches 130 degrees F for rare or 135-140 degrees F for medium. Allow the lamb to rest for 5 minutes before serving.

Serve the lamb rib chops with a sprinkle of sea salt over the top (optional) and gremolata.

So let a sistah help you out……..skip the overpriced restaurants with the “meh” prix fixed menus and jump in the kitchen to cook a delish meal for your sweetie.

But that doesn’t mean you need to slave away in the kitchen all day to impress your Boo. In fact, not only are these Sriracha Crab Cakes super easy to make but they are sure to BRING THE HEAT to your Valentine’s Day!

The crab cakes are jammed pack with lump crab and have a wonderful kick of heat from the Sriracha and jalapenos. Oh yea…..

Sriracha Crab Cakes with Spicy Remoulade
Serves 2 entrees or 4 appetizers

Ingredients:

Crab Cakes:
1 tablespoon Sriracha hot sauce
1 large egg white
2 tablespoons sour cream
1 tablespoon mayonnaise
2 teaspoons lemon juice
1/8 teaspoon paprika
1 garlic clove, finely minced
12 ounces cooked lump crab
1 red jalapeno, seeded and minced
2 scallions, chopped
2 tablespoons chopped parsley
¾ cup panko breadcrumbs, divided
kosher salt and black pepper to taste
4 tablespoons vegetable oil
2 tablespoons unsalted butter

Sauce:
½ cup sour cream
1 tablespoon mayonnaise
½ tablespoon Sriracha hot sauce
2 pinches cayenne pepper
1 teaspoon fresh lemon juice
kosher salt and black pepper to taste

Begin preparing the crab cakes by whisking together the Sriracha, egg white, sour cream, mayonnaise, lemon juice, paprika, and garlic. Once combined, gently fold in the crab meat, jalapeno, scallions, parsley and ¼ cup of the bread crumbs. You may add additional breadcrumbs if the mixture is too wet. Season with salt and pepper to taste. Divide the mixture into fourths and form each portion into equal sized patties. Dredge the crab cakes with the remaining breadcrumbs. Cover the crab cakes and refrigerate for at least 30 minutes.

Prepare the sauce by whisking together the sour cream, mayonnaise, Sriracha, cayenne and lemon juice. Add salt and pepper to taste and refrigerate for at least 10 minutes.

Heat a large skillet or cast iron on medium heat. Melt the 1 tablespoon butter into 2 tablespoons oil, swirling the liquid around the skillet. In batches, fry two of the crab cakes for 3-4 minutes on each side, until they are golden brown and heated through. Remove the crab cakes and wipe the skillet with a paper towel before adding the remaining butter and oil. Fry the remaining two crab cakes.

To plate, drizzle some of the sauce of each over each of the crab cakes and sprinkle additional chives and minced jalapeno over the top. Serve with additional lemon wedges.

That’s right, dear friends! It’s Tết – the Lunar New Year!

I have to admit, I just barely finished scrubbing down my home yesterday. As I’ve shared before, one of the rituals leading up to Tết involves some serious housekeeping. And heck–I do whatever I can to ensure that my loved ones and I will have a lucky and prosperous new year. No bad ju-ju here!

Crispy Crab & Avocado Wontons

My clan won’t be gathering until next week but my mouth is already watering just thinking about all of the delicious traditional eats that are in my near future. Rice cakes, roasted pig, sticky rice…..yummers.

Since I’ll be getting my fill of all of the traditional Tết fixins’ next week, I thought I would whip up some quick, yet satisfying bites to pay homage to the Lunar New Year. These Crispy Crab & Avocado Wontons fit that bill! I figure that since dumplings are traditionally served during Chinese New Year to symbolize money, the same may go for these lovely wontons. After all, they are gold and look like little purses 🙂

The fried wontons are filled with lump crab and pairs beautifully with the creaminess from the avocados. The sriracha adds a slight kick and when dipped into the tamarind chili sauce–perfection!

Crispy Crab & Avocado Wontons
Serves 4

Ingredients:

Wontons:
6 ounces cooked lump crab meat
½ tablespoon sriracha hot sauce
½ cup diced avocados
1 tablespoon minced chives
1 teaspoon fresh lime juice
kosher salt and pepper to taste
12 wonton skins
vegetable oil for frying

Tamarind Chili Sauce:

3 tablespoons tamarind juice concentrate
1½ tablespoons fish sauce
1 tablespoon warm water
½ tablespoon lime juice
1 tablespoon palm sugar
1 teaspoon minced garlic
1 red chili, minced finely

In a bowl, gently combine the crab, sriracha, avocados, chives and limejuice. Season with salt and pepper.

Take one wonton skin and brush the edge of each side with water. Place about 1 heaping tablespoon of the mixture in the center of the skin. Fold the ends of the wrapper together, pinching to seal. Fold the other ends together to make a little parcel. Use your fingers and pinch together all the seams to thoroughly seal. Repeat with the remaining wonton skins.

Heat the oil in a heavy bottom pot to 375 degrees F.

While the oil comes to temperature, prepare the Tamarind Chili Sauce. In a bowl, whisk together all the items and refrigerate for 10 minutes. Sauce can be stored in the refrigerator for up to one week.

Once the oil is ready, fry the wontons in batches for about 2 minutes until golden brown. Remove to a plate lined with paper towels to drain. Repeat until all wontons have been fried and serve with immediately with the Tamarind Chili Sauce.
