Spicy Prawns with Ginger Peanut Noodles

I was thrilled at the chance to participate in this month’s 24×24 with Foodbuzz—particularly since the theme was focused on budget friendly meals. And not only did our meal need to be budget conscience but we had to use items already found in our pantries. Sounds like the making of a good cooking show to me.

I began thinking of things that I ALWAYS have on hand either in my cupboards or fridge and came up with the following things:

  1. Dried pastas
  2. Fresh Garlic and Chili (whether chili sauce, paste, or even fresh chili peppers)
  3. Some type of protein in the freezer (usually shrimp or chicken)
  4. Canned vegetables
  5. Condiments (Remember, I’m a condiment monster.)
  6. Booze (Um……self explanatory.)

With that list, it became a no brainer for me………. I was going to make some type of pasta for this challenge.

I decided to make Ginger Peanut Noodles for lunch with my nieces and served it with some spicy grilled prawns. Stephanie and Nina are always such willing taste testers for my experiments. And don’t let their age fool you, they’ve got quite the refined palettes. Oh—and in case you missed the photo above, Bella was trying to squeeze in on the taste testing, too.  She heard “peanut butter” and came running.

I’ve made these Ginger Peanut Noodles on several occasions with just items pulled right out of my pantry. The type of noodle can be substituted with whatever you have on hand as I’ve used spaghetti, fettuccine, and even chow mein—anything goes! For this particular preparation we happened to have some red bell pepper which added great texture and freshness. However, thinly sliced cucumber, zucchini or even bean sprouts would be great in it, too.

Bella is still focused on the fact that I just said “peanut butter”.

As for the protein, I happen to prefer prawns with this but chicken, pork, or even tofu would be just as delicious. Just use the same marinade for whichever you choose.

 

 

Spicy Prawns with Ginger Peanut Noodles

This entire meal comes together in about 30 minutes and is perfect for a weeknight dinner or when you’re short on time during the weekends.

Fast? Budget friendly? Yummy?

Now that is a Trifecta of Goodness.

Spicy Prawns with Ginger Peanut Noodles
Serves approximately 6

Ingredients:

Prawns:
1 Pound Prawns, shelled, deveined with tails on
1 Teaspoon Red Chili Flakes
1 Tablespoon Sriracha Chili Sauce, or chili sauce of your choice
1 Tablespoon Fresh Garlic, finely minced
1 Tablespoon Low Sodium Soy Sauce
1 Tablespoon Sesame Olive Oil
2 Tablespoon Vegetable Oil

Noodles:
¾ Cup Smooth Peanut Butter
1 Tablespoon Honey
1/3 Cup Low Sodium Soy Sauce
¼ Cup Rice Wine Vinegar
1½ Tablespoons Sesame Oil
1½ Tablespoons Sambal Chili Paste
2 Tablespoons Fresh Ginger, finely minced
1 Tablespoon Fresh Garlic, finely minced
1 Teaspoon Lime Zest
½ Tablespoon Fresh Lime Juice
¼ – ½ Cup Hot Starchy Water (from boiling the pasta)
1 Whole Red Bell Pepper, thinly sliced
2 Scallions, cut into 1 inch strips
1 Pound Linguine
*Top with ¼ Cup Toasted Sesame Seeds and ½ Cup of Crushed Roasted Peanuts

Bring a large pot of water to a rolling boil. Cook linguine noodles barely over al dente.

Combine the prawns with all of its marinade ingredients together in a bowl. Cover and refrigerate.

In a blender, combine the first 10 ingredients of the noodles together. Blend until smooth. Add the starchy liquid from the pasta water until you reach the desired consistency—about ¼ – ½ Cup. Set aside.

Bring a grill pan or a large skillet to medium high heat. Lightly cover with cooking spray and cook prawns for 1-2 minutes on each side until they are opaque and golden. Remove to a clean plate and cover.

When then noodles have cooked, drain well and return to the hot pot. Ladle in a few spoonfuls of the peanut sauce at a time until the noodles have been thoroughly coated. Toss in the scallions and bell pepper slices. Plate with a mound of the peanut noodles, prawns, and sprinkle the tops of each plate with sesame seeds and crushed peanuts.

I love Bread. I love Corn. But I’ve never really LOVED cornbread.

Odd, I know.

I think it’s because most of the cornbreads I’ve sampled always had some major flaws…..either too dry, too sweet—or, just lacked flavor.

But there have been some times that I’ve tasted different versions and I’ve thought—-huh, that’s not bad at all. When it comes down to it, I prefer the ones that aren’t overly sweet but have a lot of good corn flavor. I also like the ones that have nice crispy edges.

Turkey and Bean Chili

So when I made a big ol’ pot of chili for some friends the other weekend for the big game, it just seemed right to serve it with cornbread. They go hand in hand, right?

My take below is still a work in progress but I think it’s almost there. The key components are lots of Jalapeños , whole corn kernels, cheese—and of course, the crispy edges from the cast iron skillet. Yummers.

There’s definitely still room to tweak this cornbread to make it the ultimate real deal but I barely had enough time to snap a few pictures of it before my friends inhaled it. And I mean all of it! 🙂

Jalapeño-Cheddar Skillet Cornbread

Ingredients:

1 Cup All Purpose Flour
1 Cup Yellow Cornmeal
1½ Teaspoon Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Salt
4 Tablespoons Sugar
1 Cup Buttermilk
2 Large Eggs
1 Cup Shredded Sharp Cheddar Cheese
5 Tablespoons Unsalted Butter, melted and cooled, divided
3-4 Jalapeño Peppers, seeded and minced
¼ Cup Scallions, chopped
1 Cup Corn Kernels

Place a 9 inch cast iron skillet in the oven and preheat to 400 degrees.

In a large bowl, whisk together the flour, cornmeal, baking soda, baking powder, salt, and sugar. Add the cheese and gently toss.

In a separate bowl, whisk together the milk, eggs, and 4 tablespoons of butter.

Combine the wet and dry ingredients, stirring until all items are well incorporated. Fold in the jalapeños , scallions, and corn.

Carefully remove the hot skillet from the oven. Pour the remaining butter into the bottom of the skillet and swirl around to cover the pan. Be careful as butter may splatter. Pour the batter into the skillet. Lower the oven temperature to 375 degrees and bake for about 25-30 minutes or until the center is firm and a toothpick inserted in the center comes out clean.

Cool on a wire rack for 10 minutes before serving.

In case you didn’t get that….that was my “pasta song”.  I’m a horrible singer and I really don’t like karaoke.  But I just adore pastas so much that I just have to sing it out sometimes.

Thanks to , I had lasagna sheets and penne rigate at my disposal! They feature pastas that are lower in carbohydrates, high in fiber—and most importantly, delish!

Spinach and Sausage Lasagna Rolls

I took this opportunity to make lasagna rolls filled with spinach and sausage. Rolls are a fun way to change up traditional lasagnas and since the edges are usually my favorite part (due to the extra crispiness) rolls are the perfect way to go.

And on that note…..

Yeah….I should just stick to cooking.

Spinach and Sausage Lasagna Rolls
Serves 4

Ingredients:

8 lasagna sheets
¼ cup shallots, finely diced
2 garlic cloves, finely minced
½ pound Italian sausage
1 (10-ounce) bag frozen spinach, thawed and excess water squeezed out
1 teaspoon dried thyme
¼ teaspoon dried chili flakes
¼ cup goat cheese
¼ cup cream cheese
3 cups marinara sauce
1½ cups shredded mozzarella cheese
kosher salt
olive oil

Soak the lasagna sheets in hot tap water for 8-10 minutes or boil the pasta sheets for 1/2 the time listed on the box.

In a skillet, heat olive oil and sauté shallots until they are translucent. Add garlic and cook for an additional minute. Add the sausage to the pan. Use a wooden spoon to crumble the meat and break into small pieces.  Once the meat is no longer pink, add the spinach, thyme and chili flakes. Season with kosher salt. Remove pan from the heat and add goat cheese and cream cheese. Stir to combine.

Preheat oven to 375 degrees and drain the lasagna sheets. Spread about one cup of the marinara sauce on the bottom of a baking dish. Set aside.

Spoon/spread about 3-4 tablespoons of the spinach-sausage mixture across each lasagna sheet. Carefully roll up each sheet and place the rolls, seam side down inside the baking dish. Cover the tops of each roll with a few spoonfuls of marinara sauce and mozzarella cheese.  Transfer to the preheated oven and bake for about 20 minutes.

To serve, warm up the remainder of the marinara sauce. Add a few spoonfuls to the bottom of the plate and place rolls on top.

Fresh Blueberry Pancakes….If you make them, they will love you.

Weekends are for lounging and yummy brunches.

Mimosas…..eggs benedict….pastries…..home fries……and pancakes.

Like these blueberry pancakes. Pancakes so dreamily fluffy and delicious that you’ll be thinking about them all week. Which is ok really because if you make a double batch, you can freeze the extras and enjoy them any time you want.

Fresh Blueberry Pancakes

My neighborhood store had a fantastic sale this past weekend on sweet, organic blueberries. As a result, I walked away with 10 pints of them. Excessive? Eh, not so much. Particularly since blueberries also freeze beautifully! After you wash and dry them, lay them in a single layer on a cookie sheet in the freezer. Once the berries freeze, transfer them to freezer lock bags and you’ll have delish berries at your disposal. If you don’t take this extra step, your berries will be frozen together in one huge clump—and that’s no bueno.

As for these pancakes, if you don’t have blueberries on hand, you can pretty much chop up most fruits to substitute them with. Bananas and mangoes are two of my favorites to rely on but chocolate chips are also amazing in the batter, too.

Moral of the Story: You must make these this weekend. Your family with love you. Your friends will love you. Heck—even your neighbors who will smell these pancakes will also love you.

And that is just too much Love to pass up on ❤

Blueberry Pancakes
From Cooks Illustrated
Makes approximately 16 pancakes

Ingredients:

1 tablespoon lemon juice
2 cups milk
2 cups (10 oz) unbleached all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
3 tablespoons unsalted butter, melted and cooled slightly
2 teaspoons vegetable oil
1 cup fresh blueberries or frozen blueberries, rinsed and dried

Whisk the lemon juice and milk together in a measuring cup. Set aside while you prepare the other ingredients. (Alternatively, you can use 2 cups of buttermilk in place of the milk/lemon juice.)

In a medium bowl, whisk the flour, sugar, baking powder, baking soda and salt together. Add the egg and melted butter to the milk and whisk to combine. Add the dry ingredients to the wet and whisk gently just until combined (the batter will be lumpy, that’s fine).

Heat 1 teaspoon of the oil in a 12-inch nonstick skillet set over medium heat. Once the oil starts shimmering, use paper towels to wipe the pan so only a thin, even coating of oil covers the bottom and sides. Use a 1/4 cup measure to portion the batter into the pan. Top each pancake with about 1 tablespoon of blueberries. Cook on the first side until the edges are set and bubbles form on the surface, about 2 minutes. Use a spatula to flip the pancakes and cook for 1-2 minutes on the second side, or until golden brown and cooked through. Repeat with remaining batter, adding the rest of the oil to the pan if necessary.

Tôm Rang Muối (Vietnamese Style Crispy Salted Prawns)

To me, comfort food consists of simple, everyday dishes my family grew up eating. Uncomplicated Vietnamese dishes really…. but packed with flavor—and memories.

They included braised bamboo shoots, sauteed greens in shrimp paste, beef stir fry with potatoes, and  if we were lucky–fried shrimp.

Tôm Rang Muối (Vietnamese Style Crispy Salted Prawns)

Depending on Mom’s mood—meaning if she was in the mood of peeling the shrimp or not, we would be treated to either Tôm Lăn Bột (batter fried shrimp) or Tôm Rang Muối (salted fried shrimp). Either way–I LOVED both dishes.

Tôm Lăn Bột are peeled headless shrimp, dipped into a batter, and then fried until golden brown. Tôm Rang Muối are head-on shrimp that are tossed into salt and flour (or cornstarch) and quickly fried. Since the shrimp are left with their shells on, they retain a lot of their moisture and add great texture. And the bonus—you get to suck the deliciousness from the heads!

Tôm Rang Muối (Vietnamese Style Crispy Salted Prawns)

Mom and the aunties would often make Tôm Rang Muối at our family parties, too. Since it’s so quick to make, they would whip up several batches to tie us over before we got to eat. Big plates of Tôm Rang Muối would also get sent over to wherever the “menfolk” were sitting to “nhậu“—-which is the Vietnamese word for drinking adult beverages while nibbling on food.

I’m sure my mom would scold me for broadcasting this but THANK BUDDHA that I can nhậu now, too! 🙂

Tôm Rang Muối (Vietnamese Style Crispy Salted Prawns)
Serves 4-6

Ingredients:

1 Pound Prawns, heads-on
1 Cup Rice Flour (or cornstarch, tempura powder, etc.)
1½ Tablespoon Kosher Salt
1 Red Chili Pepper, sliced
¼ Cup Green Scallions, sliced
Vegetable Oil for Frying

Devein the prawns while keeping the shells in tact. This can be done by using a sharp knife to slice the backs of the prawns. Remove and discard the veins. Using kitchen shears, snip off the antennas and legs. Place the prawns in a colander and run cool water over them. Gently shake to drain the water and use paper towels to dry off excess moisture. Sprinkle salt over the prawns, tossing well to cover each prawn. Place the colander with prawns (with a bowl underneath to catch any excess fluid) in the refrigerator for 10 minutes.

In a large pot (or deep fryer), preheat oil to 375 degrees.

Remove prawns from the refrigerator and sprinkle rice flour all over. Toss the prawns to coat and sift to get rid of any extra flour. In batches, carefully add the prawns into the hot oil and cook for about 2-3 minutes or until lightly golden and crispy. Transfer the fried prawns to a paper towel lined plate. When the grease has been drained, gently toss the prawns with scallions and chilies. Serve immediately.

When you add oats to a cookie, it becomes totally healthy.

Right?

Or am I having one of my delusional moments again?

Though with 3 cups of oats in these Chewy Oatmeal Chocolate Chip Cookies, they could almost double as a granola bar!

That settles it….I’m still calling them “healthy”. So please, don’t burst my bubble.

Chewy Oatmeal Chocolate Chip Cookies
Adapted from Quaker Oats via Bakergirl
Makes approximately 20 cookies

1/2 cup (1 stick) + 6 tablespoons butter, softened
1/2 cup granulated sugar
3/4 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon, optional
3 cups rolled oats
1 cup chocolate chips

Preheat oven to 350°F. Lightly grease two cookie sheets and set aside.
Beat butter, sugar, and brown sugar together on medium speed until smooth and creamy. Add eggs and vanilla and mix until well combined.
In a separate bowl, mix together the flour, baking soda, salt, and cinnamon, then add to the butter mixture and beat until combined. Stir in oats and chocolate chips.
Scoop dough into rounded tablespoons and place on baking sheets about 2 inches apart. Lightly press down to flatten each dough ball. Bake for 9-11 minutes, or until done (these won’t look done at first glance, they’ll have a gooey, dough-y looking centers that sets when they’re cooling, so I baked mine until they were crispy & brown around the edges. You can always poke them with a toothpick if you want to be sure). Cool 1 minute on cookie sheets; remove to wire rack and allow to cool completely.

Don’t worry….it’s not in a “better reserve me a spot at Betty Ford” love. But a deep affection, nonetheless.

So you can imagine my delight when my neighbor brought over a bottle of Leblon Cachaça as a thank you gift for dropping her off at the airport the other week. I told her I’d be more than happy to be her shuttle service if she gives me thank-you gift like these.

Huh…maybe I should rethink that Betty Ford thing, after all.

 

 

Passion Fruit Caipirinha

But let’s get back to the Cachaça. I’ve actually only enjoyed Cachaça in the beloved Brazilian Caipirinhas. Caipirinhas are fairly simple….Cachaça, tons of lime, sugar, and ice. What’s not to love, right? And with a splash of different fruit juices, you can modify Caipirinhas a ton of different ways.

Passion Fruit Caipirinha
Serves 1

Ingredients:

2 Ounces Cachaça (light rum can be substituted)
2 Ounces Passion Fruit Juice
½ Lime, cut into wedges
1 Teaspoon Sugar
Ice

In a glass, muddle sugar and limes together. Fill the glass with ice – add juice and Cachaça. Enjoy!

Buffalo Wings
Serves approximately 4

Ingredients:

2 Pounds Chicken Wings, separate wings at the joint with tips removed
½ Cup Unsalted Butter
¼ Cup Hot Sauce (I like to use Frank’s Red Hot Sauce)
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Cup All Purpose Flour
Vegetable Oil

Fill a large pot or dutch oven with about 2 inches of oil and heat until 350-375 degrees F.

While the oil is heating, toss the chicken in the flour. Shake off excess flour and carefully fry the wings in the heated oil for about 3-4 minutes on each side and until they become golden brown. This may need to be done in batches to not overcrowd your pot.

When the last batches of wings are frying, melt the butter in a small sauce pan. Remove from heat and stir in garlic powder, onion powder, and hot sauce. When the wings have all been fried, toss them with enough of the butter-hot sauce mixture until the wings have been well coated. Serve warm with blue cheese dressing, carrot sticks, and celery sticks.

I could eat pizza all of the time.

Which, lucky for me, is brilliant since I’ve worked for universities for the past 10+ years. And if you didn’t know it before, the most popular equation on college campuses is Pizza = College Students.

True story.

Macadamia Nut Pesto Pizza

In an effort to further explore the versatility of pesto, I turned to slathering pizza with this herbaceous mixture. And not just any pesto—-but Macadamia Nut Pesto! Thanks to an excess of macadamia nuts I had in my pantry (I was on a mac nut baking binge) I was able to create another version of pesto by substituting pine nuts with them.

The natural creamy rich taste of macadamia nuts was a perfect marriage to pesto and offers some solid health benefits, too.

I made my Macadamia Nut Pesto a tad on the thicker side since I knew I wanted to use it as a “sauce” for my pizza. But if you prefer a looser consistency, just stream in a tad more olive oil when processing it. I also was pretty heavy handed with the amount used for the pizza so adjust according to your preference.

And with college football gearing up this weekend, this unique spin on a pizza pie will be a sure fire win for any game day celebration!

Macadamia Nut Pesto Pizza

Ingredients:

16 Ounces Fresh Pizza Dough
8 Ounces Grilled Chicken Breast, sliced
1 Cup Crimini Mushrooms, sliced
1½ Cups Macadamia Nut Pesto*
8 Ounces Fresh Mozzarella Cheese, sliced
¼ Cup Yellow Cornmeal
2 Tablespoons Olive Oil

Macadamia Nut Pesto:
2½ Packed Cups Sweet Basil
½ Cup Roasted Macadamia Nuts, unsalted
2-3 Garlic Cloves, finely diced
½ Cup Grated Parmesan Cheese
Juice from 1/2 Lemon
Approximately ½ – ¾ Cup Extra Virgin Olive Oil
Kosher Salt and Pepper to taste

Prepare Pesto. In a food processor, pulse garlic and nuts. Add basil, cheese, lemon juice, and salt/pepper. With the food processor on, stream in olive oil and blend until the pesto is fully incorporated. Be sure to scrape down sides in between steps. More olive oil can be added if a smoother, loose texture is desired. Refrigerate until ready to be used.

Place pizza stone or large baking sheet in the middle rack and preheat oven to 400 degrees.

Lightly dust your surface area with flour. Take dough and stretch into your desired shape. Once the oven reaches its temperature, pull the baking stone/baking sheet out of the oven, and sprinkle cornmeal on the surface. Carefully slide the dough on top and bake for 5 to 10 minutes until the dough is lightly golden. Remove the crust from the oven and brush with olive oil over top. Spread an even layer of pesto over the crust. Top with the chicken, mushrooms, and cheese. Return the pizza back to the oven and bake for an additional 10-15 minutes until all the cheese has melted and pizza is golden brown. Serve with additional parmesan cheese and red chili flakes.
