The “Not-Really-Fam-Din” Dinner

I know, I know…it’s been REALLY quiet around here this past year.

The truth is, even before the world had turned upside down, I was considering what to do with this site. I started TCC in 2008 as a way to share recipes between the Fam since we all lived so far apart. And at the time, “food blogging” had only been around for a few years so I had no idea what I was doing.

As time went on, I cooked TONS more, photographed more, wrote more, and surprisingly had a lot of opportunities arise from what I considered a hobby. It was awesome! But the food landscape has evolved so much. The “food blog” game changed. Sites became highly editorialized with their photos and storylines. All WAY above my skillset. Not only was I out of my league, I was beginning to lose inspiration.

And then in early 2012 we started having our monthly Family Dinners. What was born out of a means to ensure that our family stay connected became these delicious, and yes elaborate, themed meals. TCC moved from recipes being posted 2 or 3 times a week, to Fam Din recaps so that we could document some family history. The blog kind of had a new raison d’etre and readers seemed to really enjoy following our Fam Din shenanigans—to see the dishes (the successes and FLOPS!) and to find out what the fam was up to that month.

But even with the new push, I had been behind with the Fam Din recaps at the end of last year (I blame it on being a Taurus) and as I began writing again to catch up, COVID hit……and the world stopped. Sure, quarantine and working from home gave me extra time to write but it all seemed….well, less important.

The other underlying factor was that our monthly Family Dinners stopped…. we had to. Sheltering in place was in order and non-essential gatherings were all on halt—not just for us, but the world. An 8 year tradition that we never broke had stopped. It was really tough. To try and stay connected, we’ve had weekly Family Zooms every Sunday and our seestrahs in OC make regular grocery and supply drop-offs for our Dad.

By early August, it had been nearly 5 months since California had been impacted…..and I hadn’t seen my family, who live only 90ish miles away, in-person since February. Knowing that a “second wave” and stricter mandates may be necessary this Fall, I decided to finally make a trip to see the Fam as it would have been 6 months since our last visit. I got COVID tested (which was negative) and packed up the car. And let me tell you, that 1.5 hour drive seemed like FOREVER! But once I got there—it was fantastic!

We planned to have a casual dinner together. No theme, low maintenance….hence the “Not-Really-Fam-Din” dinner situation. Plus I somehow chose to come up during a heatwave with high humidity so the least amount of cooking was paramount.

That day while we were out getting groceries, we stopped by a few places to pick up essentials— caffeine and hand soaps. We only ordered three drinks — yet somehow ended up with six…….but we did intentionally end up with that many bottles of foaming hand soap. 40 to be exact. Hey! There was a sale!

While I was up there, I was happy to see that Lucas had not lost his touch with being a puppy-whisperer. And for those of you that have been paying attention– yes, my fur-niece Lucy, who is a goldendoodle, when from a dark brown to white. Still as adorable and puppy-hyper as ever.

And although it wasn’t a “Family Dinner” some things remain the same….like the kiddos catching up on homework.

She even managed to get her big cousie, Nina, to help her on a poster for a presentation she was going to do later that week.

And of course, there were a few adult beverages consumed.

Since it was 105984266978 degrees out, I wanted to have something like and refreshing. Aperol Spritzes it is! Plus it helped me pretend that we were summering somewhere in Italy while drinking these spritzes on a balcony in Venice.

And because I know my family, I picked up some goodies for a simple Cheese and Charcuterie Board for them to nosh on. Although this was not what I had planned for appetizers, Seester N and her fam always arrive R-A-V-E-N-O-U-S …. even though they know dinner won’t be ready for hours!

To avoid a hangry backlash, I grabbed some spicy calabrese and a wedge of Saint André Triple Brie Cheese while we were at Trader Joe’s. We also found some spinach artichoke dip in the fridge and toasted up the sourdough bread that I had baked earlier….along with some fresh figs from T’s tree in the backyard.

Since it was soooo hot out, I wanted an easy appetizer that was light and required little-to-no cooking. It really is a no brainer what this family likes—sashimi and sushi! So we swung by Tokyo Central to see what they had fresh that day – and they had A LOT. I grabbed several packages of fresh fishes, nori, picked ginger, yuzu kosho …. and a few other snackies to enjoy another day.

After making the rice, I immediately handed the reigns to our resident sushi chef, Nini. She seriously has skills… not just knife skills but she also makes this crack sauce that should be bottled. That afternoon she got some back up from her big seestrah, Nina, on forming the nigiri rice.

Yes, Nini is starting her 3rd year in college but she’s been in charge of our sushi/sashimi for years now. Just goes to show what can happen with a munchin with a good palate and has been exposed to the kitchen at a young age.

Then, there was the main course. When Seestrah N texted that she would make us Bún Chả Hànội, I squealed with glee…..ask Bella. She can confirm.

Bún Chả Hànội is a Northern Vietnamese dish that consists of grilled pork skewers and pork patties with vermicelli noodles and fresh herbs/veggies. The flavors are both extremely savory and slightly sweet with pungent (in a VERY good way) notes from the nước chấm (dipping sauce) and bright herbaceousness from the herbs, greens and pickled veggies.

It’s so damn good.

Bún Chả Hànội was thrust into the mainstream foodie spotlight when Anthony Bourdain (may he rest in paradise) brought President Obama (may he long live) to enjoy the wonderful dish on his Parts Unknown show.

Seester N had marinated the pork overnight with ingredients like fish sauce, sugar, pepper, oyster sauce, garlic and shallots. For the thinly sliced pork, we skewered them on bamboo sticks that she had soaked overnight in water. For the ground pork (with the same marinade), we formed them into little patties. And for the record, she sure did scold us when she thought we didn’t make them the correct size or shape!

Once done, we handed it over to my BIL to grill. Also, can we give a big C-O-N-G-R-A-T-S to C for being newly retired! I’m incredibly envious! (We all are!)

This grill basket is a must so that the patties don’t fall through the grates. You can pick them up for a few bucks at your local Asian grocery store.

Take a gander of this beautiful spread of Bún Chả Hànội!

Bún Chả Hànội does looks similar to Bún Thịt Nướng. I would say that some of the differences is that traditionally the nước chấm is much lighter and less pungent in the former dish. It’s a bit watered down so that when served, the pork patties and grilled pork are swimming in a bowl of it. You also dunk the vermicelli noodles into the nước chấm versus having everything already assembled in the bowl like with Bún Thịt Nướng.

Think of it kind of like Tsukemen ramen where the noodles are served separately and you dunk it in the sauce/broth.

It may appear to be heavy with all of the pork but the dish is surprisingly light and is the perfect meal for a hot day. All of the fresh herbs and greens definitely contribute to that.

It’s really one of my favorites.

p.s.s.s. Pops is 79 and is definitely in the high-risk group–so he stayed home that night. Rest assured, we visited him (masked and safe) the next day to bring him leftovers.

Us: “Brother, you’ve got to decide what you want for fam din…it’s in a couple of days.”

Him: “Um….how about something simple and easy, like Italian?”

But at least we had a theme so we were off to the races compiling an Italian feast for him.

The day of I decided to bake up a tray of Rosemary Focaccia for us to munch on….and mostly because I’m a carboholic and love bread.

While the focaccia dough was on its second rise, N made us a few cocktails using Italian sodas. These were her Blood Orange Spritzers and they went down way too smooth!

By then I had pulled the Rosemary Focaccia out of the oven. After it rested for a few minutes, we sliced it up and dipped it into balsamic vinegar and olive oil.

Along with the rosemary, you may have noticed the large flakes of salt on the top of the focaccia. We’re BIG fans of Maldon and love putting it on everything– but if you’re not into it, a light sprinkle of fine sea salt would be fine, too.

V & L brought made two more dishes for us to nosh on as appetizers.

First, was a big ol’ pot of Meatballs with Marinara Sauce. The meatballs were perfectly bite-size and tender!

And second, they made Zuppa Toscana – a warm and comforting soup that had goodness like bacon, sausage, potatoes, kale and chicken stock.

Yes, for those of you that are keeping count–that’s a total of four appetizers.

Gluttons? Maybe.

But we REALLY like leftovers.

Believe it or not, as soon as we finished with the last appetizer, we jumped back into the kitchen to get dinner ready.

Okay…so maybe “gluttons” is more appropriate.

But we’re 100% alright with that.

T took the lead on the pasta dish for the evening. She was interested in making some variation of stuffed shells and when given the choice for protein, Brother went for seafood.

And man oh man…was it decadent!

The filling consisted of lump crab, shrimp and scallops—of which the latter two were blanched in lobster stock! There was also aromatics, seasonings, mayo and the tamales from the shellfish.

In addition to the stuffed shells, I made crispy Pork Milanese….because why not make another entree right?

Though I did realize that we needed some greens to offset the richness of both of the entrees.

With Nini’s help, I pulled together a quick salad of Arugula with Citrus and Parmesan Shavings.

And yes, it did make us feel better.

So we sent the humanlings off to walk the fur babies for awhile to burn off some of the dinner.

They are just too much. I want to freeze time so that they both will stay like this forever.

Oh yes, this time Princess Leia got in on the Family Dinner Birthday celebrations too. After all, she was turning double digits…the big 1-0! (Or I guess, 70 in her case….)

So her fur-less cousin Maya was happy to be sharing her bday fam din with her. And as for our sweet Maya, she turned 13.

I can’t…I seriously just can’t with the munchkins growing up so quickly.

Usually for your birthday, you get to choose what you’d like your dessert to be.

For Leia, it was a no-brainer. She’d be getting candles in a big ol’ steak like her cousin Bella.

But for Maya, I wanted to surprise her and told her “trust me, you’ll like it.” More on that later.

While we were milling around getting things prepped, we noshed on a Cheese Board that L assembled. It had Manchego with apricot preserves, Fromager d’Affinois, Picholine olives, marinated peppers and crackers.

N made the second appetizer. Truthfully, I can’t remember what it’s called but it’s like a Cheesy Spinach-Artichoke Bread Ring Dip. Picture this….take crescent roll dough and form little balls. Line a cast iron skillet with them and then fill the center with a super cheesy spinach-artichoke mixture. Bake it up and BOOM.

Miss Maya was very relaxed about her whole birthday menu. This was pretty much our convo:

Me: What would you like to have for dinner?

Maya: Um….

Me: Seafood? Sushi? Pasta —

Maya: PASTA!

Me: Ok…what kind of pasta? Chicken? Shrimp? Steak —

Maya: STEAK!

And that was it! She’s pretty low maintenance.

V and T put their heads together and came up with this Grilled Steak over Puttanesca dish. It was hearty, flavorful and combined some of my most favorite things –steak, cheese and carbs.

And since Maya loves salads, seester T decided to make the Chopped Salad from Pizzeria Mozza.

Have you had it before? If not, you’ve got to try it!

It has all kinds of goodness like radicchio, lettuce, tomatoes, chickpeas, salami, pepperoncini and provolone. And it’s actually quite hearty that you could have it as a stand alone meal with perhaps some warm toasted baguette on the side.

And then before we knew it, it was dessert time!

I’ve always wanted to make a unicorn cake…blame it on Instagram I suppose. So when I was thinking of what to bake for Maya, Nini suggested a unicorn cake because it would be something that the birthday girl would absolutely love. And if anyone knows Maya, it’s definitely her big cousie Nini.

I realize that Buttercup’s horn (yes, Maya named the unicorn) is a bit excessive, but heck–I’m not sure when the next unicorn cake will come around again so I might as well GO BIG!

I first started off with the sponge and ended up choosing funfetti. Because c’mon, unicorns love rainbows and sprinkles right?

After I baked the three layers of cake, I took a taste and thought hmm…..it kind of just tasted like vanilla cake.

For those of you that like funfetti, this may not be a surprise. But I actually think that it may have been my first time tasting it. Don’t judge me…I’m a chocolate fan myself.

So to OOMPHF up the flavor, I decided to fill the layers with fresh whipped cream and strawberries –two things that I know for certain the bday girl also adores. And I’m totally glad that I did because it really brought something fresh to the cake.

Hey- if you’re going to be extra when baking a cake, it might as well be fore a unicorn cake!

The whole thing was then covered with a light layer of vanilla Swiss meringue buttercream (always my buttercream of choice) and then I went nuts decorating Buttercup with three shades of buttercream using various piping tips.

I used standard fondant to shape her horn, ears and eyes. And for the golden sheen, I used edible gold spray for the inner ear accents as well as her magical horn.

Cute right? I wish my eyelashes were as on-point as Buttercup.

And of course, because she’s so magical, she was dusted with lots of different sprinkles and edible gold stars.

To be honest, I had a lot of fun making this cake!

So when December’s Fam Din rolled in the day before our family’s big Christmas Party, we knew exactly what we had to make for the the little man’s 6th birthday. He was quite sure of what he wanted— pizzas, fatty steaks and cookie dough ice cream. Everything else, he left up to us.

Dinner also happened to fall on the night of the big game. And as Minnesota Vikings fans (SKOLLLLL!!!), very few other games mean as much as when we meet up with those cheese heads…I mean, those Packers.  <barf>

So we had the game streaming in every room.

And apparently we needed more coverage because the boys ran out before dinner started to pick up a new TV. Nothing special…just a ginormous 65inch flatscreen.

I’ve got to admit, it was quite humorous watching all of our men attempt to mount the TV to the family room wall.

But they did it and it worked!

Poor Nina….she wasn’t feeling so hot that day–she had the terrible cooties situation everyone seemed to be getting hit with. And because she’s so caring, she even shared it with me a few days later.

Seestrah P and her fam made it down for the holidays this year so it was a full house!

It’s rare that all five siblings can be together in one place these days so we definitely try to make the most out of it when we are.

While the game was on, the enormous TV was getting set up and the kids were running amok, we assembled a quick Charcuterie Platter…because it’s how we roll.

Truffle Salami from Trader Joe’s, Camembert, Toscano Cheese soaked in Syrah, Heirloom Grape Tomatoes, Olives, Truffle Marcona Almonds, and a few crackers.

For the main appetizer (does that sound contradictory?), N made these little Spinach-Artichoke-Crab Puffs. Imagine rich spinach-artichoke dip mixed with lump crab meat—then surround it with flaky puff pastry and top it with more cheese and breadcrumbs.

So brother picked up a few prime steaks and dry aged them for a few days. He seared them on cast iron skillets that were screaming hot which gave them a beautiful crust.

And while they rested, he threw a bit of butter on top so that it could slowly melt and seep into all that beefy goodness.

And I have to tell you guys, those were some of the best steaks I’ve had in a loooong time! The combination of great quality steaks that were dry aged to intensify the flavors were just fantastic!

The funny thing that Dad often does when we cook for him is to look at the ingredients we use, ask what the name of it is, how to spell it—and then ends up taking a picture of it. He cracks me up.

And then it was FINALLY time for dessert!

Leo asked for Cookie Dough Ice Cream for his birthday dessert. But here’s the thing, although P did one heck of a job making it from scratch, it’s not a dessert that those of us 13 and older were excited about. So she did us a solid and made us a second dessert – Alice Medrich’s Warm Mocha Tart.

All the Smokey Goodness..and Then Some!

Ever since brother got a Traegar Grill/Smoker, we have been living the glorious all-the-smoked-goodness life! So it was no surprise that for his birthday family dinner, he volunteered to take on the entrees. Hey-I wasn’t going to argue with the birthday boy!

We quickly got the munchkins involved. Here’s Maya and Luna making a bechamel. I mean, what 12 and 8 year old doesn’t know how to make a bechamel???

And of course, safety first when the rugrats are cooking. Good thing Bella and Princess Leia are such conscientious supervisors.

And while the kiddos went to town, I whipped up cocktails. Since brother is a whiskey and bourbon fan, I mixed up a batch of my Boozy Fall Punch (yeah…I’m a little late on posting this).

It had all kinds of autumnal things like bourbon, brandy, apple cider, pomegranate juice, blood orange soda, cinnamon sticks and chopped up fruit.

It was boozy. It was tasty. Mission Accomplished.

The cocktails packed a punch! So we noshed on a Charcuterie Platter….because you know how much we love our cheeses and cured meats!

I just realized the La Tur cheese from Murray’s below kind of looks like a mini-cheesecake. But trust me, it was la tur-rific!

Seestrah T also made these cute Mini French Onion Bread Bowls as a second appetizer–recipe courtesy of Tastemade.

Now on to the food!!!

First up, brother smoked a ginormous side of salmon. I’ll be the first to admit, I don’t love salmon. I don’t hate it and I’ll eat it–but of the fishes, it’s not my fav. But when brother busted out this Smoked Salmon he smoked low and slow with mesquite wood pellets, I WAS ALL ABOUT IT!!

It was SUPER moist and had the lightest bit of smoke. The added capers and fresh lemon juice helped to cut through the fatty fish and it was perfect!

Not to be outdone by the aquatic beasts, he also did up a huge platter of Smoked Beef Ribs.

This time around, I was in charge of the sides. First up! Mac and Cheese!

And as you recall, I enlisted Maya and Luna to help out. No idea why N popped in…maybe to try to get in on the credit I suppose. That big seestrah of ours….

I make Mac and Cheese quite often but I was listening to a Bon Appetit Pod Cast on the way into work and decided to give their BA’s Best Macaroni and Cheese a shot.

Let me tell you gang, there’s a whole ton of various cheeses in this business — Fontina, Gruyere, White Cheddar and Parmesan. But I decided to go big and added Monterey Jack and Pepper Jack.

I mean, I didn’t want them to feel left out.

And instead of making Maya hand shred all the cheeses, we busted out the food processor. She was definitely pleased with that decision.

How did it turn out?

Quite good!

Ridiculously cheesy… but I guess 6 different cheeses will do that to a dish. But yes, I definitely recommend it. It’s quite easy to make and the end result is on point!

With all that protein and 200 pounds of cheese, I figured it would be good to have some veggies. So I pulled together a quick Sauteed Kale and Swiss Chard situation. I quickly sauteed some garlic, shallots and chili flakes in some olive oil and threw in a bunch of Lacinato Kale and Swiss Chard. After they were lightly wilted, I finished it with a douse of red wine vinegar to brighten things up.

Before dessert, most of us cleaned up a bit and someone took a nap. Oh that Leia, she’s a reliable one.

And if you’re wondering what Bella was doing, I can only assume that she was upstairs ordering take-out while watching Minecraft videos on YouTube.

Finally–DESSERT!

When we asked brother what he wanted for his dessert, he almost instantaneously replied “flan”.  And I’ve got to tell you, I was surprised. I’ve known him all my life and had no idea that the man liked flan that much!

We were dumbfounded….

Seester N’s F.I.L. has a great flan recipe so we immediately tasked her with the job. She used these cute ramekins to make individual sized flan.

And to kick things up (it was brother’s bday after all), she spiked the adult flans with rum!

The Creamy Rum Flan was perfect! Creamy (I know, it’s in the name), light and was the most delectable finish to our meal!

A Week of Holiday Cocktails – The Spiced Apple Pie

The Spiced Apple Pie

I barely survived Thanksgiving weekend.

After a marathon meal and 18+ hours of Black Friday shopping (no, I’m not exaggerating), my sibs and I dived into a delish fall/harvest themed Family Dinner.

Since we were all consumed with preparing Thanksgiving dishes (times two for my sibs since they also had Thanksgiving with their in-laws), we wanted a menu that was pretty low maintenance.

For starters, we had a charcuterie and cheese platter to munch on. Then we moved on to roasted bone marrow – utterly decadent over toasted baguette slices and then topped with an herbaceous gremolata. For the entree, a slow-braised, saffron beef ragu. It’s a lovely spin on my seester’s delectable ossobuco that is slow cooked over a few hours. After the initial searing, you let the beef do it’s own magic with little babysitting. Perfect for recuperating shoppers. We served the rich ragu over a quick, yet utterly creamy parmesan polenta from Ina Garten.

The Spiced Apple Pie

To add some veggies to the dinner, I made a salad from dark hearty greens and topped them with homegrown pomegranates (from my seester’s in-laws) and thin starfruit slices from our mother’s old tree that now resides at our auntie’s house. I also threw in some Asian pear slices, goat cheese and a drizzle of a light Dijon based vinaigrette.

And for dessert (because there’s always room for dessert!), big sis made spiced-white wine poached Bosc pears that we enjoyed with vanilla ice cream. Quite a wonderful way to end the meal.

The Spiced Apple Pie

With a fall/harvest themed dinner, I created a cocktail that celebrated the flavors of the season. For this- and to kick off our Week of Holiday Cocktails, I’m delighted to share with you all the Spiced Apple Pie. It’s made from cider, warm spices and spiced rum. Truly apple pie in liquid form—with boozey goodness, of course 🙂

Another Family Dinner done and in the books and I can’t wait for December’s Family Dinner where all 5 Nguyen Siblings (and their fams) will be present! Totally a Win-Nguyen!

The Spiced Apple Pie
Serves 2

Ingredients:

ice
8 ounces unfiltered, apple cider
2½ ounces dark spiced rum
½ teaspoon fresh lemon juice
pinch freshly grated nutmeg
pinch ground allspice
pinch ground clove
dash vanilla extract
cinnamon sticks
apple slices

Fill a large cocktail shaker with ice and add all the ingredients except the cinnamon sticks & apple slices. Shake vigorously for 15-20 seconds and strain the contents between 2 glasses that have been filled with ice. Garnish with cinnamon sticks and apple slices. Cheers!
