Sriracha Deviled Eggs
Makes 24


1 dozen hard-boiled eggs (peeled, sliced open, and yolks removed)
1/4 cup mayonnaise
3 tablespoons Sriracha
1 teaspoon rice vinegar
Salt and pepper to taste
Black sesame seeds, for garnish

Mix the yolks with the mayonnaise and Sriracha. Then add the rice vinegar, salt, and pepper. Mash it and mix it together until the mixture is smooth. It will be a little on the thin side. Spoon the filling into the egg halves. Then sprinkle a few black sesame seeds on top.

Note: I opted to use a piping bag with a decorative tip to fill the eggs and topped them with a sprinkle of paprika and some chives—but the eggs are just as delish as is.

Easy and Cheesy Breakfast Enchiladas

Y’all may recall how much I sing the praises of breakfast dishes. But when you’re someone who hits the snooze button several times a morning–every morning, spending a lot of time in the kitchen in the AM is the last thing I ever want to do.

So what’s a breakfast lovin’ gal to do?

Create recipes that you can make the night before!

Yup. Dishes that can be prepped hours before cooking that are no fuss- no muss but don’t sacrifice on the flavor.

These super easy, super cheesy Breakfast Enchiladas fit the bill. They’re filled with tons of spices, eggs, sausage & cheeses and then rolled up in corn tortillas before being smothered with more enchilada sauce and shredded cheese. At this point, you can either bake the enchiladas or throw them in the fridge overnight.

I often choose the latter option so that when my first alarm goes off in the morning, I can roll out of bed to preheat the oven….and then roll back in until it reaches temp. After a quick snooze, I throw the dish of enchiladas in and bake for about 20 minutes.

Which just so happens to be enough time for another quick snooze session.

Yea–I’ve got issues. But by the time the timer goes off, the enchiladas are ooey-gooey perfect! I dress them with some diced tomatoes, fresh cilantro, avocado, salsa and sour cream–Delicioso!

Now if I could only teach my puggle how to make coffee….

Easy and Cheesy Breakfast Enchiladas
Serves 6- 8


4 large eggs, beaten
2 tablespoons milk
½ tablespoon taco seasonings
¼ teaspoon red pepper flakes
¼ cup chopped cilantro
1 tablespoons vegetable oil
½ pound breakfast sausage
½ cup diced yellow onion
1 small jalapeno pepper, seeded and minced
2 garlic cloves, minced
kosher salt and pepper
15-ounce can enchilada sauce
12 corn tortillas
2 cups shredded Monterrey Jack or Cheddar cheese
1 scallion, diced
½ cup finely diced tomatoes
½ cup finely diced red bell pepper
1 small avocado, diced or thinly sliced
sour cream and salsa, optional

In a bowl, whisk together the eggs, milk, taco seasonings, red pepper flakes and 2 tablespoons cilantro.

In a skillet, heat the vegetable oil to medium and add the breakfast sausage. Use a wooden spoon to crumble the sausage and break into small pieces. Cook the sausage until browned and transfer to a plate.

Add the onions, jalapeno and garlic to the skillet and cook for 1 minute. Pour in the eggs. Continue cooking, gently stirring the eggs with a rubber spatula until the eggs have almost set. Fold in the cooked sausage and cook for an additional minute. Season with additional salt and pepper and remove the skillet from the stove to allow the mixture to slightly cool.

Preheat oven to 375 degrees F.

Coat the bottom of a 13 x 9-inch casserole dish with a few spoonfuls of the enchilada sauce. Pour the remaining sauce into a shallow dish. Wrap the tortillas in a kitchen towel and microwave for 30 seconds so that they become more pliable. Dip each tortilla into the dish of enchilada sauce to coat both sides. Place a few spoonfuls of the egg/sausage mixture in the center of each tortilla. Top with shredded cheese and roll the tortilla, securing all the fillings inside. Place the filled tortilla, seam side down into the casserole dish. Repeat with the remaining ingredients, placing each enchilada snuggly against each other.

Pour the leftover sauce over the enchiladas and top with the remaining cheese. Bake for 15-20 minutes or until the cheese has fully melted. Remove from the oven and top the enchiladas with scallions, tomatoes, bell pepper, avocado and the remaining cilantro. Serve warm with salsa and sour cream.

I kind of blew it.

When I posted the recipe for my Croquetas de Chorizo with Saffron Aioli dipping sauce—I seemed to have left out the recipe for the aioli. DOH!

So here it is….


Quick, easy, deeply floral from the saffron and wonderfully creamy to dunk the croquetas in. And if you should find yourself with a bit leftover, it’s absolutely delicious in lieu of mayo in potato salads, deviled eggs, or even in sammies.

Just keep in mind that if you’re wary of eating raw yolks, you’ll want to use pasteurized eggs.

Saffron Aioli
Makes approximately 1½ cups


1 cup extra virgin olive oil, divided
2 pinches saffron threads
½ tablespoon minced garlic
2 large egg yolks
½ tablespoon Dijon mustard
½ tablespoon lemon juice
1 tablespoon minced parsley
2 pinches Spanish smoked paprika
kosher salt and black pepper

In a small bowl, place 1/2 cup olive oil and saffron threads. Stir and allow the saffron to steep for 15 minutes.

Add garlic, egg yolks, mustard and lemon juice into a blender. Pulse several times until the items have mixed together. Turn the blender on low and slowly stream in the saffron steeped olive oil. Stop to scrape down the sides and continue to blend on low to stream in the remaining olive oil Add the parsley, paprika and season with kosher salt and pepper as needed. Pulse to combine. Refrigerate, covered for at least 30 minutes before serving. Optional: Before service, sprinkle with additional parsley and a saffron threads.

The last Friday of every month, my team does a gluttonous but delicious Breakfast Potluck.  With 15 people on the team bringing in all types of goodies, you can imagine what kind of extensive spread we have.

Sure, some may think it’s not so productive to gorge ourselves so early in the morning. And yes, I’m usually in a food coma for the better part of the day—but it’s just so darn tasty.

At our last go around, I decided to make an easy but hearty breakfast casserole— a Breakfast Biscuit Casserole to be exact. And you want to know my shortcut? I use a can of ready-to-bake biscuits. Yup, the same type you use in monkey bread—–mmmmm, monkey bread.

The end results in something fluffy, eggy, cheesy and just plain über delish! The prep time is nothing at all and by the time your morning coffee is ready, you’ll have the casserole in the oven.

Easy. Peasy.


Breakfast Biscuit Casserole
Serves 8


1 tablespoon vegetable oil
¼ pound breakfast sausage
1 cup chopped crimini mushrooms
3 eggs
½ cup milk
2 heaping tablespoons grated parmesan cheese
kosher salt
black pepper
1 can ready-to-bake biscuits (1 pound)
cooking spray
1 heaping cup shredded sharp cheddar
2 scallions, chopped

Preheat oven to 375 degrees F.

In a skillet, heat the vegetable oil to medium and add the breakfast sausage. Use a wooden spoon to crumble the sausage and break into small pieces. Cook the sausage until browned and transfer to a plate. Add the mushrooms to the skillet and cook until just tender. Transfer to the plate with the sausage.

In a bowl, whisk together the eggs, milk, and parmesan cheese. Season with salt and pepper.

Take each biscuit and cut them into quarters. Grease a 10-inch casserole dish with cooking spray. Spread the biscuit pieces evenly in a single layer on the bottom of the dish. Pour the egg mixture over the biscuits and sprinkle the sausage and mushrooms over the top. Top the casserole with the cheese and scallions. Bake for 35-40 minutes or until golden brown. Serve warm.

I love Kitchen Gadgets…and Cherry Clafoutis

I’m not one of those gals who dream about huge walk in closets for my clothes and accessories–though let’s be honest, I also wouldn’t turn it down either.

But no, I dream about a huge kitchen with spacious storage for cooking gear.

But I have to confess….although I do face some serious storage issues, that does not mean I stop collecting cooking gadgets. I just love them!

So when I got my hands on a Cherry Pitter courtesy of OXO, I was STOKED! I couldn’t wait to grab some of the sweet summer black cherries that have been in season and start pittin’!

Cherry Clafoutis

I decided to make a simple Cherry Clafoutis to showcase the fruit and maximize the wonderful flavor. I’ve been told that traditional Cherry Clafoutis are made with intact cherries to add that “almond-like” flavor. But really…how pleasant is it to spit out pits while enjoying dessert? Meh–not so much!

In hopes of emulating the flavor without the pits, I used almond extract and added some Amaretto liqueur. The end results were quite delicious. Fairly light considering the “custard-like” clafoutis batter and slightly sweet from the cherries.

And with that….. Pits out Homies!

Cherry Clafoutis
Serves 8


1 pound fresh cherries, stemmed and pitted
1 cup whole milk
1/4 cup heavy whipping cream
4 large eggs
1/2 cup all-purpose flour
1/2 cup sugar
3/4 teaspoon finely grated lemon zest
3/4 teaspoon vanilla extract (I used almond extract)
1/2 teaspoon kosher salt
1 tablespoon Amaretto liqueur (optional)
Powdered sugar
Preheat oven to 375°. Butter cake pan or ramekins. Arrange cherries in a single layer in pan. Combine milk and cream in a small saucepan; bring just to a simmer over medium heat. Set aside. Combine eggs, flour, sugar, lemon zest, vanilla, and salt in a medium bowl; whisk to blend. Gradually whisk in hot milk mixture; whisk until custard is smooth. Stir in Amaretto. Pour custard evenly over cherries in pan. If necessary, gently shake pan to allow custard to settle. Bake clafouti until custard is set and top is golden brown, about 30 minutes for ramekins and 45-55 minutes for cake pan. Let cool 3 minutes, then run a knife around pan sides to loosen clafouti (if using a cake pan). Dust top with powdered sugar; cut into wedges and serve.

So when I dove into Motorino’s Pizza al’ Uovo on my recent trip to NYC— I was in HEAVEN. Oooey-gooey fried eggs that just spilled into a crisp pizza covered with pancetta, basil and pecorino. SOOO good! I was hell bent on making my own version when I got home though I did make a few ingredients substitutions based upon my personal flavor preference. True– it’s nearly impossible to achieve the same type of crust that a wood fire oven can produce but overall I was very happy with it. You’ll be surprised to see how easy this is to make and it’s a guaranteed crowd-pleaser at your next brunch party.

Breakfast Pizza
Serves 2

1 Cup Lukewarm Water
1 Packet Instant Yeast
2 Cups Bread Flour, plus more for dusting the work surface and hands
2 Tablespoons Olive Oil
1½ Teaspoon Kosher Salt
½ Tablespoon Sugar
*Makes approximately 3 medium-sized pizzas

1 Tablespoon Corn Meal
Olive Oil
2 Large Eggs, crack into individual small bowls
2 Ounces Fresh Mozzarella, sliced and patted dry
4-5 Slices Bacon, par cooked and cut into large pieces
2 Tablespoons Grated Parmesan Cheese
Fresh Basil Leaves
Black Pepper

Prepare the pizza dough. Combine the water with the yeast and let set for 10 minutes until the yeast is dissolved and bubbly. Combine the rest of the ingredients in the bowl of a stand mixer fitted with a dough hook attachment. Add the yeast-water and mix until the ingredients have just combined. Cover and allow to rest in a warm area until it doubles in size—about one hour.

One hour before baking, preheat the oven to 500 degrees F with a pizza stone on the lower rack. If cooking the pizza on a baking sheet, preheat 30 minutes before baking.

When the dough has rested, take approximately 1/3 of the dough and flatten it with your hands on a floured surface. Use a floured rolling pin to gently roll the crust about 1/8 of an inch. Transfer the dough to a pizza peel (if baking directly on stone) or onto a baking sheet that has been sprinkled with corn meal. Gently brush the crust with olive oil.

Lower the oven temperature to 450 degrees F. If using a pizza peel, carefully slide the pizza in the oven on the stone. If using a baking sheet, place pizza in the oven. Par bake for about 6-8 minutes until slightly golden. Pull from the oven and carefully pour the eggs on top. Place the fresh mozzarella cheese and bacon around the pizza and sprinkle with the grated parmesan cheese. Return to oven and continue baking for an additional 6-8 minutes or until the eggs have just set and the bacon has crisped. When done, remove the pizza and top with fresh basil leaves and black pepper. Serve immediately.

So simple, so delicious, so versatile.

I recently got the opportunity to try out Safest Choice™Pasteurized Eggs and was excited at the chance to cook with them. In many recipes, eggs are served undercooked or even raw. For some, this can be a wary call as Salmonella (salmonellosis) is quite a serious concern. As such, it’s important to always use the freshest eggs when cooking. And eggs pasteurized in their shells is even a safer bet!




I’m one of those people who could eat breakfast all day long. Eggs Benedict rank among my favorite breakfast/brunch dishes—-right up there with a big ol’ plate of rice, SPAM, and an egg over easy. Now that’s some comfort food!

I definitely wanted to make a breakfast/brunch dish using Safest Choice™Pasteurized Eggs and first on my list were Oeufs en Cocotte……also known as Shirred Eggs.


Oeufs en Cocotte with Mushrooms

Oeufs en Cocotte are baked eggs in a water bath. The yolks are meant to remain on the runny side but this unctuousness is fabulous to dip toast into. As for the sauteed mushrooms—-well, y’all know I try to sneak mushrooms into almost everything I make 🙂

I opted not to add any cream to the eggs as I didn’t think it’s needed–especially because of the Gruyere. But by all means, it won’t hurt my feelings if you add a splash in. And best yet, Oeufs en Cocotte are so easy and look so fancy-schmancy that they are perfect to entertain with!

Oeufs en Cocotte with Mushrooms
Serves 2


2 Fresh Eggs
1 Cup Mushrooms (I used a mix of crimini and shitakes)
2 Tablespoons Gruyere Cheese
1 Tablespoon Shallots, diced
1 Garlic Clove, finely diced
2 Sprigs Fresh Thyme
1 Tablespoon Olive Oil
Salt and Pepper

Preheat oven to 350 degrees F.

Heat olive oil in a skillet and sauté shallots until translucent. Add mushrooms and cook until tender, about 5-6 minutes. Add thyme leaves and garlic and cook for an additional 1-2 minutes. Season with salt and pepper.

Butter 2 ramekins. Place ½ of the mushroom mixture into each ramekin and top with the cheese. Carefully crack one egg into each ramekin and season with salt and pepper. Place ramekins into a baking dish and fill with boiling water until it reaches ½ way up the sides of the ramekins. Transfer the dish to the oven and bake for 15-20 minutes until the eggs whites have set but the yolks are still a runny.

Carefully remove from water bath and serve with toast.

SPAM….The True American Offal

Folks are always asking me if we ever eat “regular” food. That question always puts a smile on my face because the BF and I have a vast array of eating/cooking habits. For one meal we may spend an entire day prepping and cooking dishes that are complex and laborious. But then there are those nights that all we eat for dinner is ice cream. True Story.

So what is one of our favorite “regular” dishes? I am proud to say it is SPAM, Eggs, and Rice….The Breakfast of Champions. Easy, quick, nostalgic, and just darn good. And it makes perfect sense since we were both raised on this goodness (I was born in the midwest and the BF is Hawaiian).

Sure, it’s somewhat questionable to what SPAM is really made of. Hormel says that it is a combination of pork and other stuff but this is one example of when I don’t question the contents and just enjoy the goodness. Come to think of it, this may be the only kind of offal that I will eat 🙂 Folks can’t even agree to what the acronym stands for though some have come up with some clever versions. My favorites that I have heard are: “Something Posing As Meat”, “Specially Processed Artificial Meat”, “Spare Parts Animal Meat” and “Special Product of Austin Minnesota”. Hilarious.

This gal prefers her SPAM sliced thinly and prepared crispy (kind of like bacon). The BF likes his sliced thicker and just lightly fried. Add rice, a fried egg, and a sprinkle of furikake and I am a happy camper! Though I also won’t pass up a good SPAM Musubi, either.

SPAM…you can’t get any more “regular” than that. But I do have one last question…..Anyone want to meet me at the SPAM Museum?

Mediterranean Style Eggs Benedict

I LOVE Brunch. And I LOVE Eggs Benedict.

Poached eggs with unctuously runny yolks? Goooood. Creamy Hollandaise? Goooood.


So on Easter morning I found myself craving a big old plate of Eggs Benedict. However, the rainy weather deterred me from going to my favorite local brunch spot (Bill’s Café). I’m such a wuss with cold, wet weather 🙂

Hence, I turned to the kitchen to fulfill my Eggs Benedict needs. I chose to dress the Eggs Benedict in a Mediterranean style since I had some feta cheese in the fridge. As for the bacon? Well, I’m in the belief that it isn’t a true brunch if bacon isn’t present. I also decided to use some rustic style bread instead of English muffins to go with the Mediterranean theme.

As for the Hollandaise? I turned to Tyler Florence’s recipe as the BF had used it a few months ago. By vigorously whisking the eggs before cooking it, it decreased the whisking time over the double boiler. MUCH easier. However, I will say I had to ask the BF to take over whisking at the beginning as my wimpy arms were getting tired. 🙂

It all came together pretty easily and quickly. I loved what the Spinach Spread added to the dish. And let’s be honest, there’s something so darn fulfilling to take your fork and cut into the poached egg. Yolk— gloriously oozing out. 🙂 As for the Hollandaise, it was a tad too acidic for us. I’d recommend cutting the lemon amount in half.

All in all, I was happy with the results and my craving was fulfilled. 🙂  Next time you’re in the mood for Eggs Benedict, give this version a try.


Mediterranean Style Eggs Benedict
Serves 2


Hollandaise Sauce (Adapted from Tyler Florence)
2 Egg Yolks
½ Tablespoon Lemon Juice
¼ Cup Unsalted Butter, melted
Pinch Cayenne
Pinch Salt

Spinach Spread
1 Cup Cooked Spinach
¼ Cup Crumbled Feta Cheese
1 Tablespoon Sundried Tomatoes, diced
1 Teaspoon Garlic, finely minced
¼ Teaspoon Dried Thyme
1 Tablespoon Olive Oil
Salt and Pepper

Poached Eggs
4 Large Eggs
½ Tablespoon White Vinegar

Additional Ingredients
4 Slices Rustic Style Bread, toasted
4 Slices of Crispy Bacon
Paprika and White Pepper to Garnish

Spinach Spread: Sauté garlic in olive oil for 1-2 minutes until fragrant but not browned. Add Spinach, sundried tomatoes, and thyme. Cook for an additional 1-2 minutes. Remove from heat and add the cheese. Salt and pepper to taste. Cover and keep warm.

Hollandaise: Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use for the eggs benedict. If the sauce gets too thick, whisk in a few drops of warm water before serving.

Poached Eggs: Bring a deep skillet of water to a simmer. Add vinegar. Gently break an egg into a large ladle and carefully lower it into the simmering water. Repeat with the remaining eggs. Poach the eggs for about 3-4 minutes, making sure that the eggs don’t stick together. With a slotted spoon, carefully remove the eggs and rest on a plate covered with a paper towel.

To Assemble: Place two pieces of bread on a plate and spread a spoonful of Spinach Mixture over each. Lay bacon over the spinach and carefully place one egg over each slice of bread. Spoon the Hollandaise over the egg and sprinkle with paprika and ground white pepper.
