Day 4 of A Week of Holiday Cocktails – Love Actually

Love Actually

I have two favorite Holiday movies that I start watching on repeat once Thanksgiving comes around. And no lie, these movies are on loop until well after the New Year.

The first is just a downright classic – White Christmas. I mean, how could you not LOVE it? Song, dance….totally old Hollywood. And of course I can recite the movie verbatim.

My second fav may seem a bit unexpected but I just adore it…yup, it’s Love Actually. I can’t even explain why I’m so obsessed with this movie but it’s just such a darn feel good. And seriously, it seems like everyone is in it!

Since I’m such a sap, it’s quite fitting that for my Week of Holiday Cocktails I create a little number called Love Actually. It’s made with all kinds of lovey goodness –champagne, chambord, raspberries and rose water. I mean if that doesn’t scream L-O-V-E, I don’t know what does.

Did I mention there’s bubbly in it?

Love Actually
Serves 2

Ingredients:

granulated sugar
1 ounce chambord
2 drops rose water
chilled champagne or sparkling wine
fresh raspberries

Pour the sugar into a small plate. Wet the rim of two champagne flutes with water and roll the edges of each glass into the sugar. Set aside and let dry for 5 minutes.

Pour ½ of the chambord into the bottom of each flute and then add one drop of rose water into each glass. Fill the flutes with the champagne/sparkling wine and drop each glass with 2 raspberries.

Mint Chocolate Martinis

These decadent martinis are the TRUTH as they combine the rich flavors of chocolate and mint — one of my favorite flavor combos. And with 5 different spirits in it, you know the Holiday spirit will be flowing should you serve these at your upcoming festivities.

Since these martinis are on the sweeter side, you can also opt to serve them as a dessert to avoid any baking or fussy pastries–not a bad idea if you’re trying to avoid unnecessary stress during holiday entertaining.

Mint Chocolate Martinis

We’ve got a bunch of little munchkins in my family so I’m often mixing up cocktails for the adults and mocktails for the kiddos. To make a non-alcoholic spin on these Mint Chocolate Martinis, fill a shaker with chocolate syrup, milk, a splash of heavy cream, dash of vanilla extract and a drop of mint extract. Shake it all up and strain into glasses–but don’t forget the candy cane rims!

Mint Chocolate Martinis

Serves 2

Ingredients:

2 candy canes
ice
3 ounces vanilla vodka
2 ounces Bailey’s® Mint Chocolate Irish cream
2 ounces
Kahlúa
1 ounce creme de cacao
splash of peppermint schnapps
1 tablespoon chocolate syrup

In a food processor, grind the candy canes until it becomes the texture of sand. Pour the candy on to a small plate. Wet the rim of each glass with water and roll the edge into the candy canes.

Fill a cocktail shaker with ice and pour in the vodka, Bailey’s®, Kahlúa, creme de cacao and peppermint schnapps. Shake vigorously for 15-20 seconds. Swirl the inside of 2 glasses with the chocolate syrup and strain the contents of the cocktail shaker between the two. Enjoy!

Day 2 of A Week of Holiday Cocktails – The Pomegranate Lush

My seester’s in-laws have an old tree that grows the sweetest pomegranates I’ve ever tasted. The seeds are sugary sweet with just a hint of tartness. And the color is an intense deep shade of burgundy. I love to throw these gems into salads, parfaits, desserts and most recently, to flavor vodka. Infused vodkas are super easy to make and add a great flavor and kick to cocktails.

To make pomegranate infused vodka, fill a mason jar (or other clean, resealable container) about 2/3 way up with pomegranate seeds. Top off the jar with vodka and use a wooden spoon to crush up the seeds a bit to help release some of the juices. Cap the jar and refrigerate for about 2 weeks, shaking the jar every few days.

Voila! Pomegranate infused vodka at your disposal.

This boozy goodnes is perfect for holiday cocktails because of it’s gorgeous hue and it packs a devilish punch. The vodka goes down quite smooth since it’s so tasty which can be a dangerous combo.

For this little number I wanted to combine the flavored vodka with a little bubbly…it is the holidays after all. Which is why I’m calling this The Pomegranate Lush –booze on booze on booze 🙂

Ingredients:

1½ ounces pomegranate infused vodka
dash of simple syrup
juice from 1 lime wedge
chilled sparkling wine

Pour the vodka, simple syrup and lime juice into a glass or champagne flute. Slowly fill the glass with the sparkling wine and enjoy!

A Week of Holiday Cocktails – The Spiced Apple Pie

The Spiced Apple Pie

I barely survived Thanksgiving weekend.

After a marathon meal and 18+ hours of Black Friday shopping (no, I’m not exaggerating), my sibs and I dived into a delish fall/harvest themed Family Dinner.

November 2013 Family Dinner

Since we were all consumed with preparing Thanksgiving dishes (times two for my sibs since they also had Thanksgiving with their in-laws), we wanted a menu that was pretty low maintenance.

For starters, we had a charcuterie and cheese platter to munch on. Then we moved on to roasted bone marrow – utterly decadent over toasted baguette slices and then topped with an herbaceous gremolata. For the entree, a slow-braised, saffron beef ragu. It’s a lovely spin on my seester’s delectable ossobuco that is slow cooked over a few hours. After the initial searing, you let the beef do it’s own magic with little babysitting. Perfect for recuperating shoppers. We served the rich ragu over a quick, yet utterly creamy parmesan polenta from Ina Garten.

The Spiced Apple Pie

To add some veggies to the dinner, I made a salad from dark hearty greens and topped them with homegrown pomegranates (from my seester’s in-laws) and thin starfruit slices from our mother’s old tree that now resides at our auntie’s house. I also threw in some Asian pear slices, goat cheese and a drizzle of a light Dijon based vinaigrette.

And for dessert (because there’s always room for dessert!), big sis made spiced-white wine poached Bosc pears that we enjoyed with vanilla ice cream. Quite a wonderful way to end the meal.

With a fall/harvest themed dinner, I created a cocktail that celebrated the flavors of the season. For this- and to kick off our Week of Holiday Cocktails, I’m delighted to share with you all the Spiced Apple Pie. It’s made from cider, warm spices and spiced rum. Truly apple pie in liquid form—with boozey goodness, of course 🙂

Another Family Dinner done and in the books and I can’t wait for December’s Family Dinner where all 5 Nguyen Siblings (and their fams) will be present! Totally a Win-Nguyen!

And here’s to the start of our Week of Holiday Cocktails!

The Spiced Apple Pie
Serves 2

Ingredients:

ice
8 ounces unfiltered, apple cider
2½ ounces dark spiced rum
½ teaspoon fresh lemon juice
pinch freshly grated nutmeg
pinch ground allspice
pinch ground clove
dash vanilla extract
cinnamon sticks
apple slices

Fill a large cocktail shaker with ice and add all the ingredients except the cinnamon sticks & apple slices. Shake vigorously for 15-20 seconds and strain the contents between 2 glasses that have been filled with ice. Garnish with cinnamon sticks and apple slices. Cheers!

Thanksgiving is rather an epic eating marathon for my family. Sure, I think many folks could say the same but what differentiates our clan is that the menu is always a fusion of traditional Thanksgiving fare with delectable Vietnamese dishes. The best of both worlds in my opinion.

We must have went through at least 5-6 different courses this year—flipping back and forth between different cuisines and let me tell ya, thank goodness I had my stretchy pants on 🙂

But in all fairness, I was trying to load up for our impending Black Friday shenanigans. Which, for the record, was an 18-hour marathon of shopping….I’m totally not exaggerating.

I definitely got my cardio in!

Double Chocolate Tart

For Thanksgiving, I ended up bringing two desserts. The first were mini Toasted Coconut Cupcakes with Coconut Cream Cheese Frosting. I had initially wanted to make a Coconut Cake but opted for mini cuppies so that we didn’t have to hassle with slicing up a layered cake. Plus the minis let people grab a bite of sweetness without feeling that extra guilt. A version of the recipe can be found here.

The second dessert I made was a Double Chocolate Tart that I topped with fresh raspberries. It’s a spin off of my original Chocolate Raspberry Tart. But since I’m a chocoholic, the old version just wouldn’t do so I added cocoa to the crust and then filled it with a truffle like ganache. Boom.

And the truth is I actually hadn’t planned on posting this tart but I’ve received several requests for the recipe since I shared the pic on Facebook. So please excuse the grainy photo as I just quickly snapped a few photos with my phone that day.

But I promise you, janky photo or not, the tart is just delish. It’s deeply rich and just a small slice will definitely fulfill any chocoholic’s needs. It also pairs wonderfully with a glass of deep, dry red wine or a cup of coffee.

And guess what? Since you can make it the day before, it’s PERFECT for any Holiday entertaining you may be planning.

A definite Win-Nguyen 🙂

Double Chocolate Tart with Fresh Raspberries
Makes 1 10-inch tart

Ingredients:

Chocolate Shortbread Crust
cooking spray
1½ cups flour
¼ cup unsweetened cocoa powder
1 tablespoons cornstarch
¼ teaspoon salt
1 cup unsalted butter, room temperature
½ cup confectioner sugar
1 teaspoon pure vanilla extract

Chocolate Filling
1½ cups heavy cream
10 ounces dark chocolate (60% Cacao), roughly chopped
*Fresh Raspberries for garnish

Preheat oven to 325 degrees. Using cooking spray, grease a 10 inch tart pan.

In a large bowl, sift together flour, cocoa powder, cornstarch, and salt. In a standing mixer, cream butter and sugar until light and fluffy. Add vanilla extract. Slowly begin incorporating in flour mixture a few spoonfuls at a time. When the dough begins to come together, transfer to the prepared tart pan and press dough into it. The dough will be quite soft. Prick the bottom of the dough all over with a fork and place in freezer for at least 10 minutes to let rest. Once chilled, line the tart with parchment paper and fill with pie weights or beans. Bake in oven for 12-15 minutes, until edges are lightly set. Carefully remove the parchment paper from the pie and place back in the oven for 5-10 minutes until center of tart is firm. Remove from oven and place on cooling rack.

Using a double boiler, heat the cream until it’s very hot but not boiling. Remove from stove and add the chocolate. Gently stir the mixture until all the chocolate is melted and smooth. You should have a beautiful glossy mixture when finished.  Pour the chocolate filling into the thoroughly cooled baked crusts.  Carefully tap the side of the pan to even out the filling. Leave tart on the counter to cool (about 30 minutes) and then move to the refrigerator to chill for an additional 2 or 3 hours. The filling should be firm when done.

Remove the tart from refrigerator and carefully slide out the outer pan ring. Transfer tart to serving platter and garnish with raspberries. ENJOY!

Man, old, man…..There’s a Baby Epidemic going around!

Yep. In less than 8 weeks, I’ve attended 5 baby showers. Now that’s a lot of baby games!

And not to brag, but I’m kind of a pro now when it comes to guessing how many jelly beans there are in a baby bottle…..or gauging the diameter of momma’s tummy using a roll of toilet paper….or everyone’s favorite–identifying the type of candy bar that has been melted/schmeared into a little diaper. Yep, y’all don’t stand a chance!

For the most recent shower I attended, I decided to bring some cuppies to the party. My friend, who is the momma-to-be, doesn’t really enjoy overly sweet desserts so I wanted to make something light but that would still satisfy everyone’s sweet tooth.

I ended up making these fluffy Raspberry Cupcakes that were flavored with fresh raspberry puree. And instead of your standard buttercreams, I topped them with rosette swirls of raspberry flavored whipped cream.

Raspberry Cupcakes with Raspberry Whipped Cream
Makes approximately 2 dozen cupcakes

Ingredients:

Cupcake Batter:
2¼ cups cake flour
1 tablespoon baking powder
½ teaspoon salt
1¼ cups buttermilk
4 large egg whites, at room temperature
½ cup unsalted butter, at room temperature
1½ cups sugar
½ tablespoon almond extract
½ cup raspberry puree*

Raspberry Whipped Cream:
1½ cups heavy cream, chilled
2 tablespoons sugar
¼ cup raspberry puree*

Garnish:
fresh raspberries

Preheat oven to 350˚ F.  Line cupcake pans with paper liners.

In a medium bowl, sift together the cake flour, baking powder and salt. Whisk together the buttermilk and egg whites in another bowl.

Place the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat at medium speed until ingredients are light and fluffy. Beat in the almond extract and then add one third of the flour mixture, still beating on medium speed. Mix in half of the milk-egg mixture, then beat in half of the remaining dry ingredients until incorporated. Add the rest of the milk and eggs, mixing until the batter is well mixed, then add the last of the dry ingredients. Continue beating the mixture for another few minutes to ensure that the batter is thoroughly mixed and well aerated. Gently fold in the raspberry puree until just combined.

Divide the batter evenly between the prepared liners, filling each about ¾ full. Bake for 18-22 minutes, or until the cupcakes are well risen and springy to the touch and a toothpick inserted in the center comes out clean.  Allow to cool in the pans for a few minutes, and then transfer the cupcakes to a wire rack to cool completely.

While cupcakes are cooling, prepare the whipped cream. Using a standing mixer fitted with the balloon whisk attachment, whip the chilled heavy cream on high until it just holds stiff peaks. Slowly sprinkle in the sugar until you reach a thick consistency. Slowly add in the raspberry puree and whip until combined.

Fit a piping bag with a fitted tip. Fill the bag with the Raspberry Whipped Cream and pipe decorative swirls on top of cooled cupcakes. Garnish with fresh berries.

**To make Raspberry Puree, add 2 pints of fresh raspberries with 2 tablespoons of water in a blender. Puree the berries until smooth. Pour the raspberry mixture through a fine mesh strainer to remove the seeds. Depending on how sweet the raspberries are, you can also add a few teaspoons of sugar while you puree them.

Here we go….let the Holiday celebrations begin!

Thanksgiving….Friendsgiving….Hannukah….Christmas…Kwanzaa…Winter Solstice…Festivus!

Don’t get me wrong, I adore them all. I’m a holiday-lovin’ gal. Heck, I’ve had my Christmas tree up for over two weeks now but with all of these festivities, there’s a lot of cooking that’s required.

And as much as I’m down for long hours of cooking and baking, I also strongly believe in dishes that I can make ahead that can still carry the spirit and yumminess (is that a word?) of the special occasion.

Ultimate Stuffed Shells

These Ultimate Stuffed Shells really fit that bill. Not only are they bright and colorful but they are just down right comfort food—something like grandma would make. Well, not my grandmas…they were old school Vietnamese and would have stuffed tofu than pasta. But someone’s grandma would have made them and it’s like getting a big ol’ hug when you take a bite.

Why do I call these “ultimate” stuffed shells? Because they’ve got all of my favs in them–spicy Italian sausage, mushrooms, spinach, and tons of different cheeses. They’re pretty easy to make and are always a fan favorite when they show up on a spread.

And with that….Bring on the stretchy pants–I’m ready for some Holiday Eats!

Ultimate Stuffed Shells
Serves approximately 6

Ingredients:

2 tablespoons olive oil
½ pound hot Italian sausage, casings removed
½ cup diced shallots
1 tablespoon finely minced garlic
¼ teaspoon red pepper flakes
¼ teaspoon dried thyme
¼ teaspoon dried oregano
1 cup minced baby portabello mushrooms
8 ounces frozen spinach, thawed and excess water squeezed out
2 tablespoons minced Italian parsley
1/8 teaspoon freshly grated nutmeg
¼ cup grated parmesan cheese + 2 tablespoons, divided
4 ounces ricotta cheese
1 egg, beaten
½ cup fresh basil chiffonade (more for garnish)
kosher salt
black pepper
20 ounces marina sauce
20-24 jumbo pasta shells, boiled to just shy of al dente
4 ounces shredded mozzarella

Heat a large skillet with the olive oil over medium-high heat. Add in the sausage and use a wooden spoon to crumble up the meat while it’s browning. Once browned, remove the sausage to a plate that has been lined with paper towels to drain.

In the same skillet, cook the shallots over medium heat for 1-2 minutes until tender but not browned. Add in the garlic, pepper flakes, thyme, oregano and mushrooms. Continue cooking for a few minutes until the mushrooms become tender. Add the spinach, parsley, nutmeg and continue to cook for an additional minute until combined. Transfer to a large bowl and cool slightly.

Preheat the oven to 375 degrees F.

Once the mixture has cooled, fold in the ¼ parmesan cheese, ricotta, beaten egg and basil until just combined. Season with salt and pepper as needed.

Pour approximately 2/3 of the marina sauce into a baking dish. Spread the sauce evenly to coat the bottom. Fill each of the shells with heaping spoonfuls of the cooled mixture and place them in the dish on top of the layer of marina. Continue until all of the shells have been filled and are placed snugly amongst each other in the baking dish.

Spoon the remaining marina sauce over the shells and then the remaining parmesan and mozzarella cheese.  Cover the dish with aluminum foil and place on a baking sheet (in case anything bubbles over during baking time). Bake the shells for 25 minutes and then remove the foil and continue baking for 10 minutes until the cheese bubbles and slightly browns.

Remove the dish from the oven and allow to cool for 5 minutes. Prior to serving, garnish with additional basil chiffonade and enjoy!

“Lickety-Split” Clams with Spicy Italian Sausage

I think that daylight savings actually stole time from me instead of giving a few extra hours of light. Lately, I feel like I’ve been scrambling around trying to get things done and my overwhelming “to-do” pile is now as enormous as Santa’s delivery list.

Thankfully, I’ve got some clutch recipes like this Clams with Spicy Italian Sausage in my back pocket that I can whip out on days when I’m racing time. Quick and easy recipes that are no fuss, are scrumptious and can be done in no time flat.

This surf and turf little beauty can be pulled together in under 20 minutes. YUP! True Story! That’s less time than it would take for me to go and grab some take out. And let’s face it, so much tastier too.

While the Italian sausage browns, you can chop up the necessary aromatics and give the clams a little scrub down. And while the clams are bubbling away in the glorious broth, throw your baguettes (or bread of your choice) in the toaster oven to brown. No time wasted here!

The briny clams pair so well with the spicy sausage and the fresh herbs and tomatoes add a brightness and subtle acidity to the dish. And the broth–OH the broth! Quite amazing how much flavor you can get in 20 minutes when you pair sausage, wine and seafood stock. Perfect to dunk your crunchy bread into.

Heck–you’ll save so much time on your meal prep that you can take a few moments to sit down and enjoy a glass of vino. After all, you had to open the bottle to deglaze the pot.

Totally reasonable.

Clams with Spicy Italian Sausage
Serves 2

Ingredients:

2 tablespoons extra virgin olive oil
¼ pound hot Italian sausage
½ cup diced red onion
1 tablespoon minced garlic
½ teaspoon red chili flakes
1 cup dry white wine
2 cups seafood stock or clam juice
2 pounds fresh clams, scrubbed and debearded
¼ cup chopped Italian parsley, plus more for garnish
3 Roma tomatoes, diced and seeded (about 1 cup)
kosher salt
black pepper

Heat a heavy bottom pot with the olive oil over medium-high heat. Add in the sausage and use a wooden spoon to crumble up the meat while it’s browning. Once browned, use a slotted spoon to remove the sausage to a plate that has been lined with paper towels to drain.

Lower the heat to medium and cook the onions for 1-2 minutes until tender but not browned. Add in the garlic, chili flakes and cook for an additional minute. Turn the heat back up to high. Deglaze the pan with the white wine and use the wooden spoon to scrape up the brown pits. Reduce the liquids by half.

Add in the clam juice and once the liquids come to a slow boil, carefully add in the clams, and parsley. Stir in the cooked sausage and cover the pot with a lid. Cook for 4-5 minutes until the clams have opened.

Once the shells have opened, remove the clams and divide them between two bowls. Stir the diced tomatoes into the broth. Check the for seasonings and adjust as needed with kosher salt and pepper. Ladle the broth over the clams and garnish with additional parsley. Serve immediately with toasted bread (baguettes or ciabatta).

When we began toying around menu themes for October’s Sunday Family Dinner, my seester T was hell-bent on a New England spread that featured these beauties—

LOBSTER MARTINIS!

Now before you cringe, I recognize that these cocktails aren’t for everyone. But if you, like many of us, enjoy a deliciously dirty–extra dirty martini, then you’ll adore these.

The Lobster Martinis are made with vodka, lemon juice and most importantly— “lobster essence”.  Lobster essence is an incredibly concentrated lobster stock that is slowly reduced down until it creates liquid lobstah goodness!

Throw it all in a shaker over ice and shake-shake-shake before straining into a glass that’s been garnished with a lobstah claw. Divine!

As for the food, we kept things actually quite low key. Nothing crazy elaborate but just darn delicious. And since we were in New England, we had to have Crab Cakes!

And in case you’re wondering, my family has Minnesota roots and it’s where I was born. So although we’re struggling this season, we HAD to represent our Vikings as they played those dang cheeseheads that day.

Now here’s my confession. We kind of had a crazy morning the day of our Fam-Din and I initially forgot to pick up the fresh clams. So I scrambled to the grocery store with my niece Nina and fixed that problem. After all, what’s a Fam-Din without a snafu or two?

Speaking of Nina, she pretty much took charge of this entire dish. I say this all of the time but when most teenagers struggle with making a peanut butter sandwich, our nieces are fixing up dishes like paella and artisan pizzas. We’re so proud!!!

And the pizza was scrumdiddlyumptious!

Seester P worked with Nini and Maya to create this Boston Cream Pie using a recipe from America’s Test Kitchen. And if you’ve ever attempted an America’s Test Kitchen recipe, you know how laborious it can be—-delicious, but laborious.

Strawberry Shortcake Cupcakes

If I could, I’d send each of y’all a big slice of birthday cake to celebrate our blogiversary. But until I can figure out the logistics behind all of that, I’d like to virtually share with you these Strawberry Shortcake Cupcakes.

A vanilla chiffon cake filled with a slightly tart, fresh strawberry compote and topped with mounds and mounds of strawberry swiss meringue buttercream.

They’re light, flirty, and just Pretty in Pink.

Strawberry Shortcake Cupcakes
Makes 24 cupcakes

Ingredients:

Filling:
2 cups fresh strawberries, roughly chopped
¼ cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
¼ cup water
2 pinches of salt

Batter:
2¼ cups cake flour
1 tablespoon baking powder
½ teaspoon salt
1¼ cups buttermilk
4 large egg whites, at room temperature
1½ cups sugar
½ cup unsalted butter, at room temperature
1 vanilla bean, split and scraped
1 teaspoon vanilla extract

Strawberry Swiss Meringue Buttercream (from Martha Stewart):
4 large egg whites, room temperature
1¼  cups sugar
1½ cups unsalted butter, softened, cut into small pieces
1½ cups fresh strawberries, pureed

Garnish:fresh strawberry slices
sprinkles, nonpareils, etc.

Preheat oven to 350˚ F.  Line cupcake pans with paper liners.

Prepare the filling. Place the strawberries and sugar in a small pot and cook over medium low heat until the juices begin to release. In a small bowl, whisk together the cornstarch, water and lemon juice. Add the mixture to the strawberries and stir in to combine. Continue cooking and stirring the strawberries until it’s thickened to the consistency of a jam. Remove from the heat and stir in the salt. Allow to cool completely.

In a bowl, sift together the cake flour, baking powder and salt. Whisk together the buttermilk and egg whites in another bowl. Put the sugar and butter in the bowl of a stand mixer. With the paddle attachment, beat at medium speed until ingredients are light and fluffy. Beat in the vanilla extract, vanilla bean seeds, then add one third of the flour mixture, still beating on medium speed. Mix in half of the milk-egg mixture, then beat in half of the remaining dry ingredients until incorporated. Add the rest of the milk and eggs, mixing until the batter is well mixed, then add the last of the dry ingredients. Continue beating the mixture for another few minutes to ensure that the batter is thoroughly mixed. Divide the batter evenly between the prepared liners, filling each about ¾ full. Bake for 18-22 minutes, or until the cupcakes are well risen and springy to the touch and a toothpick inserted in the center comes out clean.  Allow to cool in the pans for five minutes, and then transfer the cupcakes to a wire rack to cool completely.

While the cupcakes are cooling, prepare the buttercream.  Place whites and sugar in a heatproof mixer bowl set over a pot of simmering water. Whisk until sugar dissolves and mixture registers 160 degrees on a candy thermometer. Remove from heat, and attach bowl to a mixer. Whisk on medium speed for 5 minutes. Increase speed to medium-high, and whisk until stiff, glossy peaks form, about 6 minutes. Reduce speed to medium, and add butter, 1 piece at a time, whisking well after each addition. Switch to a paddle attachment. With mixer on low, add strawberry puree, and beat until smooth, 3 to 5 minutes.

Begin assembling the cupcakes. Using a pairing knife, piping tip, apple corer, or very small round cookie cutter (I used a small biscuit ring), cut out a small cavity in the cupcake. Take a pairing knife to help pop out the center. Fill each of the cupcakes with a heaping teaspoonful of the strawberry compote. Replace the small piece of cake to cover the filled centers.

Fit a piping bag with a decorative tip and fill with the buttercream. Top each of the cupcakes with large swirls of buttercream and adorn with berry slices, sprinkles or other decorative pieces.
