As it turned out, the only Sunday we could have our June Family Dinner was on the same weekend of our big seester and B.I.L.’s wedding anniversary party………..

The same event that we were slated to cook/bake the entire menu as well as prep the decor and floral arrangements.

No big deal right? Good thing we’re robots.

But our monthly Family Dinners have become a tradition and I was determined to still make it happen without having to add any extra stress.

An easy, low-key menu was a must…..especially if we could prepare things in advance.

Enter Ina Garten to save the day!

I happened to catch an old episode of hers on TV where she was fixing up a Greek/Mediterranean spread to enjoy at one of her friends’ fabulous new homes. Nearly everything was made in advance and she just carted it over to the house when it was dinner time.

And on another note, that woman has some pretty spectacular buddies in some amazing industries! Lighting specialists, florists, chefs, cheese makers,  vintners —I need to run in her crowd!!

But I digress….back to the food.

So with a loose Greek themed menu, we were off to the races.  For appetizers, we snacked on flaky, buttery, golden Spanakopita. I actually made them 2 weeks beforehand and stored them unbaked in an airtight container in the freezer. The day of our dinner as we sipped on chilled vino, I put them directly from the freezer into a preheated oven. 35 minutes later, our tummies were doing a happy dance.

As for the main menu, what’s easier than grilling? Especially if we can task the boys to do the grill work!

And since we were going Greek, we marinated chunks of lamb and chicken in Greek yogurt with tons of lemon juice, rosemary and garlic. The proteins bathed in the marinade overnight which I think helped to reduce any extra gaminess lamb is known to have as well as keep the meat tender.

Of course, the recipe is Ina’s and can be found here but I added about 1/4 cup of minced garlic to the recipe. No garlic?! Not me!

And how could we have a Greek outdoor feast without Pita Bread? Pita is something that is surprisingly easy to make (despite my first apprehension) and also can be made in advance. We ended up grilling the Pita to warm them but I think next time it would be better to toast them lightly in the oven because they got a tad crunchy for my liking. The recipe I used can from The Kitchn  can be found here.

I’d also be doing a disservice to the sis if I didn’t talk about the light Greek Salad she whipped up with feta, cucumbers, olives, fresh dill, tomatoes and red onions –it was our MUCH needed veggies!

As for dessert, we kept things relatively light –especially since we all inhaled a TON of desserts at the anniversary party the night before. So we opted for a simple Greek Yogurt Panna Cotta and topped it with a fresh fig & berries compote.

The panna cotta was a cinch to make and had similar tart flavors to Vietnamese yogurt. As for the compote, it was nothing more than cooking the figs, strawberries, and raspberries down with about 1/2 cup white wine, sugar and a bit of vanilla.

Truth be told, I was surprised how much I did enjoy dessert considering it was a last minute addition to the plate but it was  yuuuummmmmyy!

All in all, despite how crazy tired we were from the night before, Sunday Family Dinner was quite the success.

Lounging in the backyard, dangling our toes in the hot tub, sipping on vino, naps in the sun and good food with the family. The perfect way to spend a Sunday FUNday and nothing to it but a bit of work ahead of time.

Day 4 of A Week of Holiday Cocktails – Love Actually

Love Actually

I have two favorite Holiday movies that I start watching on repeat once Thanksgiving comes around. And no lie, these movies are on loop until well after the New Year.

The first is just a downright classic – White Christmas. I mean, how could you not LOVE it? Song, dance….totally old Hollywood. And of course I can recite the movie verbatim.

My second fav may seem a bit unexpected but I just adore it…yup, it’s Love Actually. I can’t even explain why I’m so obsessed with this movie but it’s just such a darn feel good. And seriously, it seems like everyone is in it!

Since I’m such a sap, it’s quite fitting that for my Week of Holiday Cocktails I create a little number called Love Actually. It’s made with all kinds of lovey goodness –champagne, chambord, raspberries and rose water. I mean if that doesn’t scream L-O-V-E, I don’t know what does.

Did I mention there’s bubbly in it?

My. Absolute. Fav.

Love Actually
Serves 2

Ingredients:

granulated sugar
1 ounce chambord
2 drops rose water
chilled champagne or sparkling wine
fresh raspberries

Pour the sugar into a small plate. Wet the rim of two champagne flutes with water and roll the edges of each glass into the sugar. Set aside and let dry for 5 minutes.

Pour ½ of the chambord into the bottom of each flute and then add one drop of rose water into each glass. Fill the flutes with the champagne/sparkling wine and drop each glass with 2 raspberries.

Double Chocolate Tart

Thanksgiving is rather an epic eating marathon for my family. Sure, I think many folks could say the same but what differentiates our clan is that the menu is always a fusion of traditional Thanksgiving fare with delectable Vietnamese dishes. The best of both worlds in my opinion.

We must have went through at least 5-6 different courses this year—flipping back and forth between different cuisines and let me tell ya, thank goodness I had my stretchy pants on 🙂

But in all fairness, I was trying to load up for our impending Black Friday shenanigans. Which, for the record, was an 18-hour marathon of shopping….I’m totally not exaggerating.

I definitely got my cardio in!

Double Chocolate Tart

For Thanksgiving, I ended up bringing two desserts. The first were mini Toasted Coconut Cupcakes with Coconut Cream Cheese Frosting. I had initially wanted to make a Coconut Cake but opted for mini cuppies so that we didn’t have to hassle with slicing up a layered cake. Plus the minis let people grab a bite of sweetness without feeling that extra guilt. A version of the recipe can be found here.

The second dessert I made was a Double Chocolate Tart that I topped with fresh raspberries. It’s a spin off of my original Chocolate Raspberry Tart. But since I’m a chocoholic, the old version just wouldn’t do so I added cocoa to the crust and then filled it with a truffle like ganache. Boom.

And the truth is I actually hadn’t planned on posting this tart but I’ve received several requests for the recipe since I shared the pic on Facebook. So please excuse the grainy photo as I just quickly snapped a few photos with my phone that day.

But I promise you, janky photo or not, the tart is just delish. It’s deeply rich and just a small slice will definitely fulfill any chocoholic’s needs. It also pairs wonderfully with a glass of deep, dry red wine or a cup of coffee.

And guess what? Since you can make it the day before, it’s PERFECT for any Holiday entertaining you may be planning.

Double Chocolate Tart with Fresh Raspberries
Makes 1 10-inch tart

Ingredients:

Chocolate Shortbread Crust
cooking spray
1½ cups flour
¼ cup unsweetened cocoa powder
1 tablespoons cornstarch
¼ teaspoon salt
1 cup unsalted butter, room temperature
½ cup confectioner sugar
1 teaspoon pure vanilla extract

Chocolate Filling
1½ cups heavy cream
10 ounces dark chocolate (60% Cacao), roughly chopped
*Fresh Raspberries for garnish

Preheat oven to 325 degrees. Using cooking spray, grease a 10 inch tart pan.

In a large bowl, sift together flour, cocoa powder, cornstarch, and salt. In a standing mixer, cream butter and sugar until light and fluffy. Add vanilla extract. Slowly begin incorporating in flour mixture a few spoonfuls at a time. When the dough begins to come together, transfer to the prepared tart pan and press dough into it. The dough will be quite soft. Prick the bottom of the dough all over with a fork and place in freezer for at least 10 minutes to let rest. Once chilled, line the tart with parchment paper and fill with pie weights or beans. Bake in oven for 12-15 minutes, until edges are lightly set. Carefully remove the parchment paper from the pie and place back in the oven for 5-10 minutes until center of tart is firm. Remove from oven and place on cooling rack.

Using a double boiler, heat the cream until it’s very hot but not boiling. Remove from stove and add the chocolate. Gently stir the mixture until all the chocolate is melted and smooth. You should have a beautiful glossy mixture when finished.  Pour the chocolate filling into the thoroughly cooled baked crusts.  Carefully tap the side of the pan to even out the filling. Leave tart on the counter to cool (about 30 minutes) and then move to the refrigerator to chill for an additional 2 or 3 hours. The filling should be firm when done.

Remove the tart from refrigerator and carefully slide out the outer pan ring. Transfer tart to serving platter and garnish with raspberries. ENJOY!

Our monthly Sunday Family Dinners have kind of morphed into Saturday Family Dinners. It may not have the same ring to it but after an evening of consuming tons of goodness, the last thing I want to do is to drive back home to San Diego to make it to work the next morning.

So last weekend, we held our monthly Fam-Din at my seester’s casa where we jumped into a Middle Eastern inspired menu. The seesters made Roasted Garlic Hummus, Cucumber-Chickpea-Feta Salad, Shish Tawook and Basmati Rice.

Shish Tawook are chicken skewers that are marinated in yogurt, citrus, spices and then grilled. My seester served them with toum which was a super garlicky sauce that she was obsessed with. Truth be told, I had no idea what toum was before this weekend but it was fantastic over the chicken. As for the salad, it went really well with the Shish Tawook as the acidity helped to cut and brighten the dish.

Initially I was going to bake fresh pita to serve alongside with the hummus and chicken but well…I got lazy, really lazy. And since one of my seesters lives down the street from a wonderful Middle Eastern grocery store, I decided to pick up some of their delicious sangkak that they bake fresh throughout the day. Sangkak is a Persian flatbread that is slightly chewy and the one I picked up from Aria was about 36 inches long, speckled with sesames seeds, and was steaming hot.

As for my homemade contributions to dinner, I made a Pistachio-Orange Blossom Cake for dessert and Pomegranate Mojitos. Yea, yea….I know mojitos are Cuban but I considered it a fusion since I used pomegranates and fresh mint for this cocktail—totes Middle Eastern flavors. 🙂

As for the cake, well…..truth be told, this was an 11th hour addition. The original dessert I had planned to make was a Pistachio Pound Cake but when it cooled, it weighed a gazillion pounds and was as hard as a brick!!! It totally confounded me as the recipe appeared “normal” and I didn’t over bake it but that’s how new dessert recipes roll sometimes. Hit or miss. But if I didn’t experiment on my loved ones, who would I try new recipes on? 🙂

So with dinner just a few hours away, I pulled out one of my tried and true recipes and modified it a bit to compliment our Middle Eastern themed menu. To a trusted cake batter, I added finely ground pistachio nuts, fresh orange zest and a few dashes of orange blossom water that I had picked up when I grabbed the sangkak.

With a hope and a prayer, I served my “do-over” cake with fresh berries, a citrus scented whipped cream and crushed pistachios. And guess what? The seebs and kids really liked it! Really! Because if they didn’t, they would’ve told me in a heartbeat. That’s the thing with family. They give brutally honest feedback–something I completely appreciate it….when it comes to cooking, that is.

The cake was rather light and beautifully aromatic from the pistachios and orange flavors. And although I did cover it with a glaze, it wasn’t too sweet and paired well with the fluffy whipped cream I scented with orange zest. As for the berries, wonderfully tart and bright.

All in all, it was a delicious and successful Fam-Din! And true to form, we hadn’t finished 1/2 of our meal before we started planning April’s menu—Japanese!

Cocktails: Pomegranate Mojito
Appetizers: Roasted Garlic Hummus with Sangkak Flat Bread
Entrees: Shish Tawook with Toum, Crispy Rice, Cucumber-Chickpea-Feta Salad
Dessert: Pistachio-Orange Blossom Cake

Pistachio–Orange Blossom Cake
Serves 8-10

Ingredients:

Cake Batter
2¼ cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
1¼ cups buttermilk
3 large eggs, at room temperature
1½ cups sugar
1½ tablespoons fresh orange zest
½ cup unsalted butter, at room temperature
1 teaspoon almond extract
1 tablespoon orange blossom water
½ cup finely ground pistachios

Glaze
½ cup powdered sugar
1 tablespoon unsalted butter
1 tablespoon honey
1 tablespoon heavy cream
1 teaspoon fresh orange zest
¼ cup roughly chopped pistachios

Orange Scented Whipped Cream
1 cup heavy cream, chilled
2 tablespoons sugar
1 tablespoons fresh orange zest

Preheat oven to 350˚ F.

In a medium bowl, sift together the flour, baking powder and salt. Whisk together the milk and eggs in another bowl.

In a bowl of a stand mixer, combine the sugar, orange zest and rub them together with your fingers until the sugar is moist and fragrant. Add the butter and with the paddle attachment beat at medium speed until ingredients are light and fluffy. Beat in the almond extract and orange blossom. Then add 1/3 of the flour mixture, still beating on medium speed. Mix in ½ of the milk-egg mixture, then beat in 1/3 of the remaining dry ingredients until incorporated. Add the rest of the milk and eggs, mixing until the batter is well mixed, then add the last of the dry ingredients. Continue beating for another minute to ensure that the batter is thoroughly mixed and then add in the ground pistachios. Mix until just combined. Pour the cake batter into a well greased bundt pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minute before carefully inverting onto a wire rack to cool completely.

Once the cake has completely cooled, create the glaze. In a large measuring cup, combine all the glaze ingredients except the nuts. Microwave in 20 second intervals until the glaze has just combined (whisking in between). Slowly spoon the warm glaze over the cake, allowing it to soak in between spoonfuls. Sprinkle the crushed pistachios over the cake and let it cool for 1 hour before slicing and serving. *The glaze is quite thin. For a thicker consistency, double the amount of powdered sugar.

Before serving, prepare the whipped cream. Using a standing mixer fitted with the balloon whisk attachment, whip the chilled heavy cream on high until it just holds stiff peaks. Slowly sprinkle in the sugar until you reach a thick consistency. Add in the zest and whip until combined.

Serve the cake with dollops of whipped cream, additional chopped pistachios and fresh raspberries (optional).
