Game Day Garlicky-Parmesan Chicken Wings

There’s no hiding it, I’ve been seriously MIA. With the holidays and the craziness of the Death Eaters overtaking the Ministry, I desperately needed a break to recharge. Trust me, there’s been a TON of cooking with the winter holidays, family dinners, both Western & Lunar New Year, and endless sporting events—-all of which I plan to share with you all soon.

But I needed something to kick start me back into the writing game….and that, my friends, is Football.

Truthfully I don’t have a pony in tomorrow’s Super Bowl Game.

Falcons? BLEH!

Patriots? Patooey!

But football, oh–for the love of FOOTBALL! Nothing can beat the frenetic craziness when it’s a good game.

And although I don’t have much stake in the game tomorrow, let me tell you of a game where my whole being was on the line….the 2017 Rose Bowl Game!!!

Yes Friends…it was the GAME of GAMES where my USC Trojans battled Penn State. Both teams had undergone years of drama, leadership changes, team changes, injuries. But both fought and somehow they found themselves battling it off at one of the most iconic collegiate bowl games–the Rose Bowl.

Despite weeks of endless indulgence, we convened at big seestrah’s house to watch the game. And when it’s game day, there MUST be game day eats!!!

Seester T made a huge pot of rich and comforting Beef and Beans Chili. Her chili is way better than mine which is somewhat unnerving because she just throws things into the pot and poof–amazing chili.

Brother and Seester N tag teamed to get the components together for Loaded Beef Nachos using tortilla chips that I freshly fried. I know it sounds laborious but fresh fried chips make a huge difference!

As for me, I was in charge of the Chicken Wings because hot damn–we love us some wangzzzz’!  When in doubt–wing it out!!

I ended up brining the wings overnight in a solution of water, salt, sugar, hot sauce and some other aromatics. I don’t always have the time to do this, so if you don’t–skip it. But I do think it’s worth this extra step as it infuses in an oompf of flavor. Obvi.

I also despise rubbery chicken wings. You know what I’m talking about– wings that haven’t been crisped enough or opt not to use a flour coating. Don’t get me wrong, other than K.F.C. (and I mean Korean Fried Chicken), I generally don’t like a thick breading on my wings–the meat to coating ratio just doesn’t work out well.  But I do like how a light toss in a mixture of AP flour and rice flour (or cornstarch) helps with the crispiness factor.

I ended making two types that day – my standard Buffalo Wings and per my niece Nina’s request, these Garlicky-Parmesan Chicken Wings. Super garlicky, super cheesy, super crispy….definitely not diet food.

As for the game….I WAS STRESSED!!!

I won’t lie, I was the hottest mess in all the land.

There was some ridiculously high moments and some terribly low ones when the fam was terrified of what my wrath would be if it didn’t end well for the Trojans. But in the last second, my boys pulled the big W and we (more like I) LOST OUR MINDS!! The joy–OH THE JOY!

So although I don’t have much at stake in the game tomorrow….I can 100% empathize with those who do.

For the love of football, make it a great game tomorrow Pats’ and Falcons……..and as for y’all—please make my Garlicky-Parmesan Chicken Wings ❤

Garlicky-Parmesan Chicken Wings
Serves approximately 4

Ingredients:

8 cups warm water
1/3 cup kosher salt
1/3 cup sugar
1/3 cup hot sauce, I like Frank’s
8-10 sprigs fresh thyme
8-10 sprigs fresh parsley
1 head of garlic, cut in half
1 lemon, cut in half
1 tablespoon black peppercorns
2 bay leaves
2 pounds chicken wings, separate wings at the joint with tips removed
vegetable oil
2 cups all purpose flour
½ cup rice flour or cornstarch
1 tablespoon onion power
2 tablespoons garlic powder, divided
1 teaspoon cayenne power
1 cup unsalted butter
½ cup olive oil
2 tablespoons finely minced garlic
¼ teaspoon red pepper flakes
1 cup finely grated Parmesan cheese
1/3 cup shredded Parmesan cheese*
½ cup chopped fresh parsley

In a large container, whisk the warm water with salt, sugar, and hot sauce until everything has dissolved. Add the thyme, parsley sprigs, garlic, lemon, peppercorns and bay leaves. Add the chicken wings and push down to ensure that all pieces are submerged. Cover the container and refrigerate overnight or about 8 hours.

Drain the chicken and pat dry with paper towels.

In a large, heavy bottom pot, fill 2-3 inches of oil. Heat until temperature reaches 350 degrees F.

While the oil heats, combine the flour, cornstarch, onion powder, 1 tablespoon garlic power, and cayenne power in a large resealable bag. Close the bag and gently toss until the ingredients have combined. In batches, toss the chicken wings in the dried mixture until well coated and shake off any excess. Place the coated wings on a rack fitted over a baking sheet. This will help set the crust.

Begin making the garlic butter sauce by adding the butter, olive oil, remaining garlic powder, minced garlic and pepper flakes in a small saucepan. Over low heat, cook for 10-15 minutes–be careful not to burn the garlic.

Once the frying oil reaches 350 degrees F, begin frying the wings in batches, turning occasionally. Fry the wings for about 10 minutes each batch until they have turned golden brown. Transfer the fried wings to a clean rack fitted over a baking sheet and keep warm in a low temperature oven. Repeat until all the wings have been fried.

Place all the wings in a large bowl. Add several spoonfuls of garlic butter sauce and grated Parmesan cheese. Toss well until all the wings have been coated—adding more garlic butter sauce as needed. Plate the wings and sprinkle the tops with the shredded Parmesan cheese and parsley. Serve immediately with blue cheese dressing, ranch dressing, carrots and celery sticks.

*I like the different textures that come from using both grated and shredded Parmesan. But if you want to use one over the other–knock yourself out!

For the past few weeks I’ve been making out like a citrus bandit!

Coworkers have been hooking me up with tons of their homegrown citrus –  grapefruits, meyer lemons, tangerines, and oranges. So for tomorrow’s Super Bowl shenanigans, I will be using up a few of the lovely grapefruits to make a slight spin on one of my favorite cocktails – the Greyhound.

Before I delve into that wonderful goodness, I wanted to make sure that y’all had ample ideas for your Super Bowl spread so that you can fully enjoy game day. And the fun perk? It’s all finger foods!

By now, you know my deep affection for the Moscow Mule. It’s a fantastic game day cocktail and even if you don’t have the traditional copper mugs to serve them in, sturdy mason jars will be just fine.

But copper mugs are OH-SO-GLORIOUS and keep your drinks so icy cold.

This time with Apple Moscow Mules! They’re made with apple flavored vodka, apple cider, bitters and ginger beer.

And finally, we’re back to where we started–with the wonderful Greyhound.

Traditionally, Greyhounds are a simple cocktail made from vodka and grapefruit juice. Easy-peasy.

I usually like to add a splash of simple syrup to offset the natural bitterness from the juice. Which is perfect for my slight spin on the Greyhound as I like to add simple syrup that is infused with fresh rosemary.

The floral rosemary compliments the flavors of the grapefruit so well that you’ve got to stop yourself from guzzling it down too quickly!

The steps below are for a single serving but it’s just as easy to make a full carafe of it and have it sitting in a chilled bucket at your Super Bowl spread or brunch table….. you get where I’m going with this.

Rosemary Greyhounds
Serves 1

Ingredients:

½ cup sugar
½ cup water
2 sprigs fresh rosemary
ice
1½ ounces premium vodka
4 ounces fresh grapefruit juice
additional rosemary & grapefruit wedges for garnish

In a small saucepan, combine the sugar and water over medium low heat. Bring to a low boil and stir until the sugar has dissolved Stir in the rosemary sprigs and take off the heat. Allow the syrup to come to room temperature. Remove/discard the sprig and pour the syrup into a resealable container. Refrigerate for a few hours prior to use.

Fill a tumbler or other glass with ice that has been rimmed with sugar. Add the vodka, 1-2 splashes of rosemary simple syrup (depending on sweetness preference), and grapefruit juice. Stir gently and garnish with rosemary and grapefruit wedge.

The thing is, I rarely ever have any true vested interest with the Super Bowl. Because although my beloved Vikings may be full of heart, we don’t seem to be able to get our act together to make a showing in the big game.

Well, not since the 70’s at least. Ughh…..

But that’s not to say that I don’t love to partake in all the Super Bowl festivities.

And by festivities, I mean gluttonous food and adult beverages. Hey, it would be un-American not too!

My loved ones and I typically like to get our Super Bowl parties started early so we can have a full day of indulgence. To kick-off the AM shenanigans, I wanted to come up with something that married the spirit of brunch and football. And what does that better than gorgeous eggs and pizza?!

Potato-Egg-Prosciutto Pizza
Serves 2

Ingredients:

1 whole garlic head
2 tablespoons olive oil, divided
1 cup thinly sliced new potatoes
½ tablespoon minced fresh rosemary
1/8 teaspoon red pepper flakes
¾ teaspoon kosher salt, divided
6 ounces fresh pizza dough, rested and at room temperature
2 tablespoons all-purpose flour
½ tablespoon corn meal
2 large Safest Choice™ pasteurized eggs
1/8 teaspoon black pepper
2 thin slices prosciutto, torn into small pieces
2 ounces goat cheese
1 cup fresh arugula leaves

Prepare the garlic paste by preheating the oven to 400 degrees F. Peel and discard the outer skin from the garlic head. Cut off the very top part of the garlic head so that the cloves are just barely exposed. Place the garlic head on a piece of aluminum foil and drizzle 1 tablespoon of olive oil over it. Bunch the foil together to cover the garlic and roast for about 30 minutes until the cloves are golden brown. Once cooled, squeeze the cloves out of their skins into a small bowl. Using a fork, mash up the garlic so that it becomes a paste. Set aside.

While the garlic roasts, mix the potato slices, rosemary, pepper flakes and ½ teaspoon kosher salt in a small bowl. Set aside.

Once the garlic has roasted and has been removed from the oven, turn up the oven heat to 500 degrees F. Place a baking sheet on the middle rack of the oven while it preheats.

Take the pizza dough and flatten it with your hands on a floured surface. Use a floured rolling pin to gently roll the crust about 1/8 of an inch. Transfer the rolled out dough to a pizza paddle or lightly floured cutting board. Spread a thin layer of the roasted garlic over the entire pizza dough. Place the potato slices, slightly overlapped, over the top of the pizza. You’ll want to leave two small spaces uncovered where the eggs will rest.

Carefully remove the preheated baking sheet from the oven and sprinkle it with the cornmeal. Slide the pizza onto the baking sheet and bake for 20 minutes. Take the pizza from oven and crack 1 egg into each of the predetermined spots. Place the pizza back into the oven and bake for another 5-7 minutes or until the eggs have set and the crust has become golden brown.

Slide the pizza onto a large cutting board and season with the remaining kosher salt and black pepper. Top with the prosciutto pieces, goat cheese and arugula. Serve immediately.

The Ultimate Baked Potato Dip

Ingredients:

24 ounces sour cream
1 packet ranch dressing mix
½ teaspoon black pepper
½ teaspoon paprika
¼ teaspoon cayenne powder
1-2 tablespoons hot sauce
1 heaping cup chopped scallions
1½ cups shredded sharp cheddar cheese
½ cup shredded pepper jack cheese
1½ heaping cups chopped crispy bacon

In a large bowl, stir together the sour cream, ranch dressing mix, pepper, paprika, cayenne and hot sauce until combined. Fold in the scallions, cheeses, and bacon. Cover and refrigerate for a minimum of 4 hours.

15 minutes before serving, remove from the refrigerator and stir to take off some of the chill. Garnish with additional cheese, scallions and serve with your choice of chips. Enjoy!

It’s Super Bowl Weekend. And if you’re like many Americans, your local pizza joint will be making some deliveries to your house this Sunday.

Sure, it’s convenient and some are quite tasty. But why not make your own??

This Roasted Garlic Chicken Pizza is super easy to make and ridiculously delicious. I’ve made my own pizza dough (courtesy of my tried and true Epicurious recipe) but if you’re short on time, you can definitely pick up some pre-made dough from your local pizzeria or grocery store. Trader Joe’s has a great one for under $2.

If you have a pizza stone, this is definitely the time to use it. The stone will add a crispier texture to your crust. But I found that I had pretty nice results using a baking sheet—just be sure to use corn meal on the bottom.

And if you’re a garlic lover, you will be smitten with the SUPER GARLICKY flavor from the roasted garlic. But let’s not forget how deliciously cheesy this pizza is–three types of cheeses will do that for you 🙂

This will definitely be a WIN for your Super Bowl Party.

 

Roasted Garlic Chicken Pizza

 

I, myself, am boycotting the Super Bowl. As a lifelong Vikings fan, I just cannot watch the Packers!

Roasted Garlic Chicken Pizza
Serves 4

Pizza Dough (Adapted From Epicurious):
1½ Teaspoon Active Dry Yeast
3/4 Cup Warm Water
2 Cups All Purpose Flour
1 Teaspoon Sugar
1 Teaspoon Salt
3 Tablespoons Olive Oil

Toppings:
2 Tablespoons Olive Oil
¼ Cup Roasted Garlic
1 Tablespoon Yellow Cornmeal
1 Cup Cooked Chicken Breast, diced
1 Cup Roma Tomatoes, diced
¼ Cup Sundried Tomatoes
1 Cup Shredded Mozzarella Cheese
¼ Cup Feta Cheese
2 Tablespoons Grated Parmesan Cheese
¼ Cup Scallions, diced
¼ Cup Fresh Italian Parsley, finely diced
Kosher Salt and Pepper
Serve with additional Parmesan Cheese and Red Chili Flakes

Prepare Dough. Sprinkle the yeast and sugar over the water. Let stand 2-3 minute, or until the yeast is creamy. Stir until the yeast dissolves. In a large bowl, combine the 2 cups flour and the salt. Add the yeast mixture, 1 tablespoon olive oil and stir until a soft dough forms. Turn the dough out onto a lightly floured surface and knead, adding more flour if necessary, until smooth and elastic, about 10 minutes. Lightly coat a large bowl with oil. Place the dough in the bowl, turning it to oil the top. Cover with plastic wrap. Place in a warm, draft-free place and let rise until doubled in bulk, about 1 1/2 hours. Flatten the dough with your fist. Cut the dough into 2 pieces and shape the pieces into balls. Flatten the dough slightly. Dust the tops with flour. Place the balls of dough on a floured surface and cover each with plastic wrap, allowing room for the dough to expand. Let rise 60 minutes, or until doubled.

Place pizza stone or large baking sheet in the middle rack and preheat oven to 400 degrees.

Lightly dust your surface area with flour. Roll/toss/stretch the dough into your desired shape. Once the oven reaches its temperature, pull the baking stone/baking sheet out of the oven, and sprinkle cornmeal on the surface. Carefully slide the dough on top and bake for 5 to 10 minutes until the dough is lightly golden. Remove the crust from the oven and brush with olive oil over top. Spread the roasted garlic all over the crust and add chicken, sundried tomatoes, and Roma tomatoes. Season with salt and pepper. Cover the entire pizza with the cheeses and scallions. Return the pizza back to the oven and bake for an additional 10-15 minutes until all the cheese has melted and pizza is golden brown. Sprinkle the pizza with Italian parsley and serve with additional parmesan cheese and red chili flakes.
